The quality characteristics and antioxidant activities of yogurts made with these strains are studied. The pH of yogurt was 3.7~4.5 up to the third storage day and the acidity was 0.9~1.7% when the days of storage passes through. With the addition of the coffee extract, the pH was lowered gradually. The number of viable cells also slightly increased through the storage day. As the coffee extracts were amended, the number of viable cells in most samples increased compared to that of the samples without coffee extract. Comparing the growth rate between L. fermentum and L. casei at pH 2.5 and pH 6.4, these two bacteria were resistant to acid. The mixed strains of starter, L. bulgaricus and S. thermophilus as well as L. plantarum appeared to have the decreased growth rate when pH was lowered. L. fermentum showed the best antioxidant activity whereas L. plantarum showed relatively low antioxidant activity. With regarding to the sensory evaluation of each yogurt, the yogurt made with the starter and L.casei were rated highly overall. Yogurt made with L. plantarum had generally the lower favorability score on the test. Up to the third storage day, DPPH radical scavenging activity in yogurt without coffee extract was 2.4 ~ 29.3% while samples with coffee extract showed 29.2 ~ 86.8% activity.
