This study was conducted to grasp the actual condition of sugar reduction of foodservice workers in Gyeongnam area. A preliminary survey was conducted to test sweetness tastes for children's foodservice workers, and the awareness and performance of sugar reduction were surveyed for workers at group foodservice centers. In the self-evaluation regarding preference for sweet foods, 44.5% of the subjects responded‘medium’, and 34.2% responded ‘dislike.’. Subjective sweet taste perception, the highest was ‘prefer to eat medium sweet foods’with 43.8% followed by ‘prefer to eat unsweetened foods’with 41.1%. With regard to sweetness awareness by concentration of samples for judgements of sweetness, it was shown that subjects recognized concentration differences relatively well and they preferred 2.5% concentration the most(4.23±1.19). According to the results of judgements of sweetness, ‘prefer to eat very unsweetened foods’was the highest with 35.6% and it showed that workers at foodservices for children generally eat a moderate amount of sugar or eat less sugar. When looking at the age range of research subjects, there was a significant difference between the two groups. While dieticians in their 20s and 30s were the highest with 67.8%, more than 90% of the cooks were in their 40s. The survey results on eating behavior concerning sugar showed a score of 3.54±0.68, which can be interpreted as that they eat three meals a day relatively regularly, prefer snacks, bread, and beverages, and do not eat desserts after meals. When it comes to frequency of eating out per week, there was a meaningful difference(p〈0.01) with dieticians showing the highest response for once or twice a week(50.8%) and cooks showing the highest response for less than once a week(52.7%). There was a meaningful difference between dieticians and cooks concerning necessity of education(p〈0.01), willingness to participate in education(p〈0.01), intention to put low-sugar eating habits into practice(p〈0.05). When examining sugar reduction performance rating, almost all of the items got more than 3 out of 5 except one item of ‘Use a slotted spoon to reduce the amount of sauce’(2.91±0.96). As for food serving stage, the item of ‘Hot food is served at a moderate temperature’(3.95±0.79) showing the highest among all of the items.
