This study verifies the stability of nutrient composition by using mostly abandoned herbal medicine by-products as an alternative food source and examines the growth effect of Protaeria brevitarsis seulensis larvae. As a result of comparing the nutritional components of oak sawdust fermented by adding effective microorganisms (EM), non-fermented by-products of medical herbs, by-products of medical herbs fermented by adding EM and by-products of medical herbs fermented by adding oyster mushroom fungi (Pleurotus ostreatus), crude protein, crude fat, and crude ash content, except crude fiber content, was high in both non-fermented and fermented medicinal herbal by-products. Cadmium, lead, mercury, and other heavy metals were not detected and thus stability as alternative food was confirmed. The growth comparison based on the feeding sources shows no significant difference between the fermented oak sawdust fed control group and the herbal medicine by-products fed laboratory group from 1 to 3 weeks. The weight of the 4 week larva was 0.137g in the control group and 0.671g in the laboratory group and so began to reveal differences at a significant level(P<0.05). From first to seventh week, the weight of larvae fed on herbal medicine by-products fermented by adding oyster mushroom fungi (Pleurotus ostreatus) is somewhat higher than that of larvae fed on herbal medicine by-products fermented by adding EM but there was no statistical difference. As a result of comparing weights of Protaetia brevitarsis seulensis larvae according to the level of herbal medicine by-product addition, EM 40% and OM 80% showed the highest weight at the 7th week, which was no statistically significant difference in each weight of EM 40%, OM 40% and EM 80% at the 5th week(P<0.05). This result indicates that feeding EM 40%, OM 40%, and EM 80% at the 5th week is the most effective. Over 90% survival rates were confirmed in all treatments. An analysis of the general composition of Protaetia brevitarsis seulensis larvae showed that its protein content was much higher than that of the Protaetia brevitarsis seulensis larvae fed on fermented oak sawdust. Thus it is expected that as the nutrient composition of the larvae fed on the herbal medicine by-products is excellent and the shipping date can be moved up by shortening the rearing period as an edible insect, the feed cost of the rearing farmer can be reduced and therefore the economical rearing method can be established.
