The study was also carried out to confirm the storage stability of meat analogue by storage temperature and period. Various vegetable oils such as castor oil, orange oil, palm oil, shortening, and margarine, were added to make meat analogue. Meat analogue was prepared by adding 10, 20, 30, 40, and 50 g of each vegetable oil based on 100 g of textured vegetable protein. The meat analogue was stored at -18°C and -60°C for six months and analyzed at intervals of one month. Cooking loss, drip loss, water contents, liquid holding capacity, texture, color, and antioxidant contents of meat analogue were assessed because they have a major influence on preference. Thiobarbituric acid reactive substances, volatile basic nitrogen, and microorganism of meat analogue were analyzed since they are closely related to stability. Sensory evaluation was also performed to evaluate sensory characteristics of meat analogue. Meat analogue with orange oil had higher water contents than others regardless of the amount of added oil and storage conditions. Liquid holding capacity of meat analogue added orange oil was relatively high. DPPH radical scavenging assay of meat analogue with orange oil was higher compared to others. In sensory evaluation, it also showed effects of decrease in soy odor and increase in juiciness. In results of frozen storage, temperature scarcely affected the quality. Storage stability of all meat analogue samples was maintained for six months although quality of meat analogue was slightly reduced as the storage period became longer. Total coliform group bacteria were not detected regardless of storage conditions. The total number of bacteria, thiobarbituric acid reactive substances, and volatile basic nitrogen in all meat analogue samples were within the allowable level according to the Korean Food Standards Codex with Ministry of Food and Drug Safety although they increased slightly by the storage period. Therefore, it is thought that orange oil has an effect on improvement of preference, juiciness, and soy odor of meat analogue and the quality of meat analogue can be maintained for at least six months through frozen storage. Also, it can be judged that additional study on the recommended daily amount of orange oil and optimal concentration is necessary to apply results of this study to industry.
