This study determined how varying periods of natural fermentation of cassava roots influenced the quality, digestibility and sensory properties of cassava pasta made in composite with hard wheat flour. Cassava roots were fermented for a period of 12, 36 and 60 hours. Pasta was prepared from cassava flour and hard wheat flour at an equal ratio. The physicochemical properties, microbial analysis, pasting properties, in vitro digestibility, X-ray diffraction (XRD) analysis of the flour; color, cooking properties, texture profile analysis (TPA) and sensory properties of the pasta were assessed using standard methods. The results revealed a decrease in pH from 6.82 at no fermentation to 4.38 after 60 hours of fermentation. Moisture content, carbohydrate, water absorption capacity, swelling, and solubility indices increased with an increase in fermentation time. The carbohydrate content increased from 84.91% at no fermentation to 94.74% after 60 hours fermentation. For moisture content, water absorption capacity, swelling index and solubility index, the changes observed were 2.67% to 5.28%, 1.01 to 1.18, 3.57 to 4.53 and 19.41 to 41.83 respectively from 0 hours (no fermentation) to 60 hours fermentation time. Also, the peak viscosity of flour increased with fermentation time from 135.00 RVU at 0 hours to 158.79 RVU after 60 hours fermentation time. Fermentation also reduced the resistant starch (RS) content of cassava flour from 62.14 at 0 hours to 36.10 after 60 hours fermentation time. The sensory assessment showed that flour produced from cassava roots fermented for 36 hours gave pasta with the most acceptable qualities in composite with hard wheat flour. The study, therefore, suggests that allowing cassava roots fermentation for a period of 36 hours will yield pasta of better desirable quality.
