The purpose of this study was to examine the status and demands of foodservice management in elderly day care centers, and the survey about sanitary and nutrition management was conducted by 79 employees who managed foodservice in centers. The contents of survey consisted of general characteristics, status of sanitary and nutrition management (importance, performance), the reason of poor performance, factors for improvement and the employee’s demand for support. 51.9% of the centers designated a social walker as foodservice manager and centers without dietitian accounted for 53.2% of the total. Sanitary management showed an average importance score of 4.8±0.4 and a performance score of 4.7±0.6, importance score is higher than performance (t-value:8.260). As a result of an Importance-Performance Analysis, there was a positive correlation between importance and performance in sanitary and nutrition areas. As a result of this study, we identified foodservice managers in elderly day care center recognize the importance of sanitary and nutrition management but performance is relative low and confirmed that they have the will to improve the foodservice management. The result of Importance-Performance Analysis showed a significant positive correlation between importance and performance (R2=0.427) and the items such as “performing hand hygiene” and “cooling management” etc. had low importance recognition with low performance. All respondents answered that preparing sanitary management standards was necessary, and the item to be considered preferentially was “development of sanitary management manual”. About half (56.0%) of the hospitals frequently performed sanitary management inspection. Through this study, it was possible to identify items that need improvement in the future by investigating the status of sanitary management in long-term care hospitals. For items with low importance and performance, it is necessary to improve the awareness of the need for them. We can conclude that manuals and standards which considered hospital foodservice environment should be developed. It will be helpful in improving foodservice safety in hospital.
