As the income level rises, demand for dining out is steadily increasing, while the number of restaurants is also continuously increasing. Restaurant review platforms such as Yelp, Open Table, and Zomato provide crucial information like contact information, hours and location, customer reviews, and reviewers’ reputation to support the decision-making process for a restaurant selection that suits users’ preferences; however, the amount of reviews continues to increase. As the number of users increases, they often confront a difficulty of selecting a restaurant they prefer in a timely manner. A method to solve this problem is a restaurant recommendation system. In other words, the restaurant recommendation system uses various information filtering techniques based on the user's past restaurant visit history or service experiences using comments and thereby resolve the user's having troubles selecting a restaurant due to information overload. However, since the previous studies on the restaurant recommendation system focus on system development for performance improvements such as recommendation accuracy or diversity, it is challenging to find studies on the effect of various types of input information on the performance of the recommendation system. In Chapter 2 of this study, a two-phase experimental design is proposed to investigate the influence of information such as restaurants, reviews, and reviewers from one of the global restaurant review platforms, Yelp.com, on the recommendation system performance. In the phase I experiment, the effect of reviewers and review information on the recommendation performance was confirmed with the use of the present CF technique identifying neighbors. Furthermore, in order to analyze how the characteristics of restaurants affect the recommendation system performance, the phase II experiment examined the change in its performance due to the provision of information regarding the price or type of restaurants within the process of generating the final list of recommendation. The experimental results are as follows. First, from the phase I experiment, the recommendation system performance considering the reviewer's elite status and the cumulative number of reviews was improved more than that of the existing CF. Factors that confirm the improvement of the recommendation system performance belong to solely reviewers’ characteristics, whereas the review information did not have a significant effect. Second, from the phase II experiment, the recommendation performance considering the restaurant price and the average rating improved more than that of the existing CF, regardless of the final size of the recommendation list. In the case of the methodology considering the types of restaurant, the recommendation performance shows a greater improvement when less than ten restaurants are recommended, compared to the case when the CF is only used. Although the dining out platforms have allowed consumers to enjoy the dine outs in a more convenient, quicker manner, consumers are yet exposed to risks with regard to food quality and hygiene as they have insufficient amount of information about food before their order. Therefore, online reviews in the food service industry has become critical. Generally speaking, online reviews provide an important source of information that helps consumers make purchase decisions for products and services. Having gone through the reviews, consumers can reduce the cost of searching for products and services as well as uncertainty about their quality. Since the reviews written on the restaurant platform contain the real experiences of customers who had already tried the food, consumers make decisions about whether to purchase the food or not. In other words, online reviews provide a gateway for consumers to make their purchasing decisions for particular products or services. This study used the Elaboration Likelihood Model in Chapter 3 to explore factors affecting the evaluation of whether a review was useful or funny among numerous reviews of restaurants. Through the division of the restaurant type into ethnic and non-ethnic restaurants, the moderating effect of restaurant type on the relationship between central cues, peripheral cues and hedonic values as well as utilitarian values was investigated. As a result, the review length and the number of images among peripheral cues and cognitive effort, emotional experience, and sight, hearing, smell and taste among the central cues were found to influence the hedonic evaluation. Ethnic restaurants also moderate the effects of review ratings, taste, and touch on hedonic evaluation. Second, the review length and the number of images among peripheral cues and emotional experience, sight and smell among the central cues affected utilitarian evaluation. Also, ethnic restaurants moderate the effect of review ratings and hearing on utilitarian evaluation. Thus the academic and practical contributions of the study on the moderating effect of ethnic restaurants on hedonic and utilitarian evaluations using the restaurant review data are as follows. First, this study reveals that information processing of reviews based on the ELM consists of a peripheral path (e.g. review length and number of images included in a review) and a central path (e.g. cognitive effort, emotional experience, sight, smell, and taste). Second, the moderating effect of ethnic restaurants was confirmed on the relationship between the peripheral or central cues and the hedonic or utilitarian evaluation of reviews. Third, unlike the previous studies performed content analysis to derive the emotional score of the review, this study performed big data analysis. Fourth, while the previous studies used a single scale to measure the multisensory experience of review, this study measured the multisensory experience by dividing the multisensory experience into sight, hearing, smell, taste, and touch. Fifth, the results of this study will help restaurant managers to take corrective measures on negative reviews and strengthen the promotion of positive reviews, which will potentially enhance customer satisfaction. Lastly, identifying the factors affecting the hedonic and utilitarian evaluation of reviews is also expected to enhance customer satisfaction.

In other words, online reviews provide a gateway for consumers to make their purchasing decisions for particular products or services. This study used the Elaboration Likelihood Model in Chapter 3 to explore factors affecting the evaluation of whether a review was useful or funny among numerous reviews of restaurants. Through the division of the restaurant type into ethnic and non-ethnic restaurants, the moderating effect of restaurant type on the relationship between central cues, peripheral cues and hedonic values as well as utilitarian values was investigated. As a result, the review length and the number of images among peripheral cues and cognitive effort, emotional experience, and sight, hearing, smell and taste among the central cues were found to influence the hedonic evaluation. Ethnic restaurants also moderate the effects of review ratings, taste, and touch on hedonic evaluation. Second, the review length and the number of images among peripheral cues and emotional experience, sight and smell among the central cues affected utilitarian evaluation. Also, ethnic restaurants moderate the effect of review ratings and hearing on utilitarian evaluation. Thus the academic and practical contributions of the study on the moderating effect of ethnic restaurants on hedonic and utilitarian evaluations using the restaurant review data are as follows. First, this study reveals that information processing of reviews based on the ELM consists of a peripheral path (e.g. review length and number of images included in a review) and a central path (e.g. cognitive effort, emotional experience, sight, smell, and taste). Second, the moderating effect of ethnic restaurants was confirmed on the relationship between the peripheral or central cues and the hedonic or utilitarian evaluation of reviews. Third, unlike the previous studies performed content analysis to derive the emotional score of the review, this study performed big data analysis. Fourth, while the previous studies used a single scale to measure the multisensory experience of review, this study measured the multisensory experience by dividing the multisensory experience into sight, hearing, smell, taste, and touch. Fifth, the results of this study will help restaurant managers to take corrective measures on negative reviews and strengthen the promotion of positive reviews, which will potentially enhance customer satisfaction. Lastly, identifying the factors affecting the hedonic and utilitarian evaluation of reviews is also expected to enhance customer satisfaction.
