Pears (Pyrus pyrifolia Nakai) have been reported to have a variety of physiological activities, including anti-inflammatory, antihyperglycemic, diuretic, cough relief, and use as a prophylactic agent for alcohol hangovers. Demand for fresh-cut fruits is steadily increasing in various dietary habits for consumers seeking health and convenience with the recent expansion of single-person households. However, the practices of fresh-cut processing promote cut-surface browning in fruit while exposed to air, reducing shelf life or marketability. Several attempts are being made to reduce the browning of fresh-cut fruits, including the use of additives, controlled and modified-atmosphere packaging, and edible coating. The purpose of this study was to assess the effects of two polysaccharide-based edible coatings (alginate and chitosan) in combination with anti-browning food additives on the overall quality of fresh-cut pears. To examine the anti-browning effect of the edible coating on fresh-cut pears, the browning index (BI) and the formation of melanin pigments were measured using a colorimeter (CR-400) or at 420 nm. In addition, the effects of edible coating on lipid peroxidation and microbial growth in fresh-cut pears were investigated. In comparison to uncoated pears, fresh-cut pears coated with alginate and chitosan showed a less pronounced change in browning index during room temperature exposure. Our results showed that coating treatment with alginate and chitosan completely inhibited lipid peroxidation and efficiently suppressed microbial growth during storage conditions. The anti-browning effect of edible coating was also evident in IQF pears. Taken together, edible coatings are effective in inhibiting the tissue browning as well as suppressing microbial growth and lipid peroxidation of fresh-cut pears. These coatings are therefore believed to be useful for preventing browning and extending the shelf life of a variety of fresh-cut fruits.
