The purpose of this study was to examine parents' perceptions towards, and the importance and performance levels of, foodservices in child-care centers and to suggest ways to increase foodservice quality and promote efficient operations in the future. A questionnaire survey was provided to 540 parents and the return rates 82%. The survey period was from June 20 to July 27,2007. The collected data were statistically analyzed with the SAS package program using descriptive statistical analysis, t-tests, ANOVA, Duncan's multiple comparisons, factor analysis, and multiple regression analysis. The results were as follows: The parents perceived that foodservice operations promoted their children's health and helped them form desirable dietary habits. The parents also had a high level of perception toward the need for foodservice, earning greater than 4.5 points out of 5 points. Their perceptions of foodservice quality were examined by four dimensions of importance and performance levels. While the parents gave 4 points or greater of 5 points to most quality attributes of importance level, they gave 4 points of less out of 5 points to most quality attributes of performance level. As for the importance and performance levels of the quality dimensions of meal service, the parents regarded sanitation as the most important dimension. IPA showed that 'organic food materials' was included as a 'focus here' area. The overall satisfaction level for foodservice was 3.59 out of 5 points. A higher level of satisfaction was shown when a dietitian was present as well as in public childcare centers. According to multiple regression analysis, 53.51% of the variance in the respondents' overall satisfaction scores was explained by factors such as food, sanitation, environment, and foodservice effects.

제안 방법
급식담당자 대상 설문지는 급식운영현황을 조사하기 위한 설문으로 구성되었다.
보육시설 급식에서 제공하는 17개 속성의 품질특성과 이를 구분한 4개영역으로 학부모들이 보육시설에서 제공받는 급식의 서비스 품질 특성을 얼마나 중요하게 인식하는지의 정도(중요도)와 급식의 서비스 품질에 대해 느끼는 정도(수행도)를 5점척도로 평가하여 그 결과를 [Table 5]에 제시 하였다.

성능/효과
‘음식의 양(1)’, ‘계절음식(5)’, ‘식단의 이행(6)’은 ‘Overdone’ (3구간)영역으로 보육시설 급식소에서 잘 수행되고 있으나 중요하다고 판단하지 않고 있는 속성들로 나타났다.
17개 속성 중 1개 속성이 ‘Focus Here’(1구간)영역에 포함되었으며 이는 ‘친환경(유기농)식재료 사용(7)’으로 친환경 식재료 사용을 중요하다고 판단하지만 잘 수행되지 않는 것으로 나타났다.
17개의 급식품질속성 중 ‘계절음식’이 전반적인 만족도에 가장 유의한 영향을 주는 것으로 나타났으며(p<.001), ‘식단의 이행(p<.01)’, ‘전용식당 보유(p<.01)’, ‘조리담당 인력의 위생(p<.05)’, ‘급식으로 인한 아동의 식습관 교정효과 (p<.05)’ 속성도 유의한 영향을 주는 것으로 나타났다.
[Table 4]은 측정도구의 타당성을 검증하기 위한 요인분석으로 분석결과 17개의 속성들은 4가지 영역으로 구분되었고 전체 변량은 68.38%로, 요인1인 음식 및 가격영역은 변량이 45.55%, 요인2인 위생영역은 9.19%, 요인3인 분위기 영역 7.77%, 요인4인 급식효과 영역 5.89%이며, 각 차원의 신례도 계수는 0.79~0.89로 나타났다.
국공립, 법인, 민간, 직장 및 가정 등의 보육시설 유형에 따라 비교한 결과 중요도 및 수행도가 모든 영역에서 유의한 차이가 있었다. 중요도는 국공립 보육시설에서는 음식 및 가격영역을, 법인 보육시설에서는 분위기영역을 가정 보육시설에서는 위생영역 및 급식효과 영역이 점수가 높은 반면 국공립 보육시설에서의 수행도 점수가 가장 높은 것으로 나타났다.
급식에 대한 전반적인 만족도는 보통수준의 만족도 점수로 나타났으며, 영양사가 배치된 보육시설과 국·공립 보육시설의 만족도가 높게 나타났다.

또한 수행도는 분위기 요인만 군 지역이 높고, 영양사가 배치된 보육시설과 국·공립보육시설이유의하게 높은 것으로 나타났다.
배경변인에 따른 급식서비스 품질영역에 대한 중요도 및 수행도는 학부모의 경우 급식 중요도는 환경요인만 군 지역이 높게 나타났으며, 민간보육시설의 급식 중요도는 가장 낮은 것으로 나타났다. 또한 수행도는 분위기 요인만 군 지역이 높고, 영양사가 배치된 보육시설과 국·공립보육시설이유의하게 높은 것으로 나타났다.
보육시설 급식에 대한 전반적인 만족도에 영향을 주는 급식품질속성을 분석하기 위해 다중회귀분석을 수행한 결과를[Table 8]에 제시하였으며, 음식의 양, 음식의 영양, 음식의 신선도, 식단의 다양성, 계절음식, 식단의 이행, 친환경 식재료 사용, 급식비, 전용식당 보유, 위생·소독시설, 시설의 위생, 식기·식탁 및 의자의 위생, 조리담당인력의 위생, 실내장식, 조명, 급식으로 인한 아동의 식습관 교정효과, 급식으로 인한 아동의 위생습관 교정효과 등의 속성들이 전반적인 만족도에 대해 53.51%의 설명력을 보였다.
분석결과 속성과 영역 모두에서 중요도가 수행도 보다 높게 평가되어 모두 품질에 대해 개선이 필요한 것으로 나타났다. 중요도는 17개 속성 중 음식 및 가격영역의 ‘음식의양’ 및 ‘급식비’와 환경영역의 ‘실내장식’ 및 ‘조명’을 제외한 13개 속성과 4개영역 중 분위기 영역을 제외한 3개 영역에서 ‘중요하다(4점)’ 이상의 점수를 나타낸 반면 수행도는 모든 속성과 영역이 ‘그렇다(4점)’ 미만으로 나타났다.

시, 군의 지역에 따라 비교한 결과 중요도 및 수행도가 환경영역(p<.001, p<.01)에서 유의한 차이가 있었으며 군지역의 중요도 및 수행도 점수가 더 높았다.
영양사 배치유무에 따라 비교한 결과 중요도는 위생영역에서 유의한 차이가 있었으며(p<.05), 영양사가 배치되지 않은 경우에 위생에 대해 더 중요하게 인식하고 있는 것으로 나타났다.
음식 및 가격 영역의 ‘음식의 신선도’와 위생영역의 ‘시설의 위생’의 중요도가 평균 4.70점과 4.67점으로 가장 높았다.
전반적인 만족도는 평균 3.59점으로 보통 수준의 만족도 점수를 나타냈으며, 영양사 배치 유무에 따라 전반적인 만족도를 비교한 결과 영양사가 배치된 경우 평균 3.93점인 반면, 영양사가 배치되지 않은 경우 평균 3.53점으로 나타나 유의한 차이를 보였다(p<.001).
급식에 대한 전반적인 만족도는 보통수준의 만족도 점수로 나타났으며, 영양사가 배치된 보육시설과 국·공립 보육시설의 만족도가 높게 나타났다. 전반적인 만족도에 영향을 주는 급식서비스 품질속성은 계절음식, 식단의 이행, 전용 식당 보유, 조리담당인력의 위생, 급식으로 인한 아동의 식습관 교정효과가 유의한 것으로 조사되었다.
조리전담인력은 22.5%가 없는 것으로 나타났고, 조리사가 없는 이유는 ‘원아가 조리사 배치기준인 40명 미만이어서 불필요해서’라는 응답이 77.8%로 가장 높았다.

보육시설의 질을 결정하는 구체적인 기준을 제시하기 위해 실시하고 있는 보육시설 평가인증제도(Korean Childcare Accreditation Council 2008)의 평가인증지표 5~7개 영역 60~85항목 중 조리실과 식자재 관리 및 급식과 잔식관련 항목은 3~4항목에 불과하며 내용이 평가의 척도로서 구체적이지 않다. 따라서 급식의 만족도에 영향을 미치는 급식품질 속성을 고려하여 실질적인 평가가 가능한 척도로의 개선이 필요할 것으로 사료된다.
따라서 보육시설에 영양사배치를 통해 급식의 전반적인 만족도에 영향을 미치는 것으로 분석된 ‘급식으로 인한 아동의 식습관 교정효과’를 향상시킬수 있도록 전문적인 영양교육 및 영양 상담을 포함한 급식 관리가 이루어져야 할 것으로 판단된다.
따라서 식습관 형성의 주요시기인 영유아기에 바람직한 식행동을 유도하며 보육시설의 급식제공과 영양교육의 질적 향상을 위해서는 급식비를 지불하는 학부모의 기대감과 보육시설의 급식품질에 대한 수행도 간의 차이를 감소시키고자 하는 양질의 급식서비스 제공을 위한 연구가 요구된다. 또한 제품과 서비스를 모두 제공하는 급식관리는 단순히 음식을 조리하여 고객들에게 제공한다는 개념에서 탈피하여 급식품질 속성인 영양, 위생, 기호, 환경, 서비스 등을 고려 하여 피급식자의 반응을 조사하고 개선해야 한다(Choo 2003).
