여주는 어떤 성분을 함유하고 있는가? | 여주(Momordica charantia)는 쓴맛이 강한 한해살이 박과 식물로 아프리카, 남아메리카, 동남아시아, 뉴질랜드, 인도, 중국, 일본 등에서 널리 재배(Park 등, 2007)되고 있으며, 바이타민 A, 바이타민 C, 포타슘, 철 등이 풍부하고 글리코사이드, 사포닌, 알칼로이드, 테페노이드 등을 함유하고 있어 항괴사, 항고혈당과 당뇨합병증 예방 효능(Lee 등, 2015a; Moon 등, 2015)과 항암 효능(Raina 등, 2016)이 보고되면서 기능성 소재로서 각광받고 있다. 여주의 색상은 미숙과에서는 엽록소에 의해 짙은 녹색으로 보이지만 과숙상태가 되면 표면은 노란색, 여주의 씨앗은 붉은 색으로 변하는데 이는 숙성단계별로 카로테노이드가 발현되면서 나타나는 색의 변화로 숙성될수록 다양한 카로테노이드가 발현되고 그 함량이 증가하는 것으로 보고되고 있다(Cuong 등, 2017;Tuan 등, 2011). |
