This study was conducted to understand the dietary life of North Koreans by analyzing dietary life-related articles published in Joseon Nyeoseong, which is the only women's magazine in North Korea. This study employed content analysis of 769 articles from 1999 to 2017. The major findings of this study were as follows. Out of the 769 articles, 131 (17.0%) were about dietary culture, 541 (70.4%) were about the food and nutrition, and 97 (12.6%) were about food production. The articles emphasized ethnic food and North Koreans ingredients, spices, cooking methods, containers, and etiquette. A variety of foods and ingredients were used to maintain health, as well as to treat common illnesses and health problems. There were 173 recipes mentioned in the magazine, but no foreign food recipes. There were many dishes that could be preserved for a long time such as Kimchi and pickles. For food security, many vegetables and plant-eating animals such as rabbits were cultivated. Overall, the results indicate that North Korea has been maintaining its unique dietary life without being influenced by foreign countries.

『조선녀성』의 식생활 관련 기사 분석을 위해 내용분석(content analysis)방법을 사용하였다. 내용분석 방법은 연구 자료로부터 반복 가능하고도 타당한 추론을 이끌어 내는 데 필요한 연구 기법(Krippendorff 2004)으로 잡지, 신문, 기사, 책, 라디오, 이미지, 광고 등을 통해 시대의 특징을 밝히고자 할 때 사용될 수 있는 질적 연구 방법 중의 하나이다(Kim 2017).
내용분석 방법은 연구 자료로부터 반복 가능하고도 타당한 추론을 이끌어 내는 데 필요한 연구 기법(Krippendorff 2004)으로 잡지, 신문, 기사, 책, 라디오, 이미지, 광고 등을 통해 시대의 특징을 밝히고자 할 때 사용될 수 있는 질적 연구 방법 중의 하나이다(Kim 2017). 내용분석의 결과물인 현상을 보여주는 개념 또는 범주를 도출하기 위해 개방코딩(open coding), 범주화(creating categories), 추상화(abstractions) 단계를 따르는 Elo와 Kynags(2007)의 귀납적 내용분석으로 수행하였다. 추출된 기사내용의 주제를 중심으로 개방 코딩을 한 후 더 높은 수준의 영역으로 그룹화 하는 과정을 통해 최종 범주를 도출하였다.

성능/효과

하지만 북한 식생활의 주체자가 여성인 만큼 『조선녀성』을 통해 광범위한 주제를 중심으로 식생활 관련 지침을 전달하고 있음을 확인할 수 있었고, 이를 근거로 최근 19년간의 전반적인 북한 식생활 특징을 살펴보았다 . 남한의 경우 경제성장과 대외 개방 확대에 따라 식생활 서구화가 급격히 증가하고 있으나, 북한의 식생활은 ‘변화’보다는 전통성과 ‘우리식’ 식생활을 고수하는 경향이 강하게 나타나고 있음을 확인할 수 있었다. 다만 『조선녀성』이 북한 당국의 생각과 정책을 전달하는 대표적인 공간(公刊)문헌 으로 실제 북한 주민들이 일상생활에서 직접 경험하는 식생활과는 차이가 있을 수 있다는 한계를 가지고 있다.
가사전담이라는 전통적인 여성의 역할을 충실히 수행해야 하는 만큼 식생활에 있어서 조리법 및 조리팁을 가장 핵심적으로 북한여성주민들에게 전달하고 있었다. 또한 식재료가 음식 재료 및 풍부한 관능적 특성을 부여하기 위해 사용되기 보다는 생리활성 성분 및 그 효능을 바탕으로 건강유지 및 감기, 동상 등 경미한 질병치료 목적에 사용된다는 특징을 나타냈다.

후속연구

하지만 그 마저도 시도되지 못하고 있는 것이 현재 북한 식생활 연구의 현실이다. 따라서 본 연구의 대상 된 『조선녀성』외에 북한 식생활을 살펴볼 수 있는 다양한 북한 공간문헌 발굴이 요구되며, 식생활이 당 시대의 정치사회경제적 상황을 가시적으로 보여주는 지표가 될 수 있는 만큼 북한 관련 학제 간의 소통과 접목을 통해 북한 식생활 연구에 대한 통합적인 접근 또한 지속적으로 이뤄져야 할 것이다.
다만 『조선녀성』이 북한 당국의 생각과 정책을 전달하는 대표적인 공간(公刊)문헌 으로 실제 북한 주민들이 일상생활에서 직접 경험하는 식생활과는 차이가 있을 수 있다는 한계를 가지고 있다. 이에 주민의 실제 경험담을 통한 자료와의 비교 연구를 통해 최근 북한 식생활에 대한 특징을 다각도에서 살펴보는 추가적인 연구가 이루어져야 할 것이다.
