○ Title : Development of improvement technology for the remain rate
This study was carried out to obtain a basic information on selection of rice cultivar with high embryo retention rate from rice milling and embryo retention rate as affected by moisture content of brown rice. We also evaluated the influence of packing method, and storage temperature on grain quality for development of packing technology. Thirty nine rice cultivars including non-glutinous, glutinous, low amylose type, etc. were tested at three milling degrees of 94%, 92% and 90% ratio to the brown rice weight using abrasion type miller. In milling degree of 94%, 92% and 90%, the varieties of Unkwang, Baekjinju, Sindongjin, Dongjin 2, etc. showed higher embryo retention rate than other varieties. However, Junam, Hopyeong, Odae, Hwangeumnuri, etc. had high embryo retention rate at milling degree of 94%, but the embryo retention rate was decreased as milling degree increased to 92% and 90%. Grains milled by friction type miller contained 3, 1.5, 3.7 times higher total amino acid, GABA, and tocopherol, respectively, than those milled by abrasion type miller. Also, varieties with high retention rate of embryo contained 2 to 4 times of amino acid higher than varieties with low retention rate of embryo. Sindongjin, Junam, and Hopum showed high retention rate of embryo in TM and bulk milling method. Negative correlation between retention rate of embryo and moisture content of brown rice was observed. The retention rate of embryo was decreased by approximate 10% as moisture content increases by 1%. Retention rate of embryo was more influenced by moisture content of brown rice after drying rather than dry method. The retention rate of embryo was increased positively with whiteness, chalkness of brown and milled rice, but decreased negatively with milling times. Based on milling speed, variable speed milling method was higher than constant speed method in embryo retention rate. In bulk milling over whiteness 37, varieties like Draechan, Unkwang, Hopum, Dongjin 2, Sindongjin, Junam showed high embryo retention.
Based on the influence of packing method on grain quality, protein content and whiteness were not affected by storage periods. Their colors were changed cleary at 10 weeks from storage, because their b-values were decreased, and freshness were changed rapidly after 4 weeks. The palatability was declined with increase in storage periods, and it was high in vacuum packing, and vacuum+deoxidation packing than other packing methods after 10 to 12 weeks. In palatability test of the packed rice 'hetbahn', product of CJ Cheiljedang, taste score was higher in the improved hetbahn(3.33) than the existing ones(3.27), preference score of rice embryo also higher in the improved hetbahn(3.37) than the existing ones(3.31).
