- 1등급이상 한우거세우 고급육을 생산하기 위하여 12개월령 거세한우 25두를 일반 고급육프로그램을 적용하는 대조구와 16개월령부터 아미노산첨가에 비타민C 제제 혼합급여구(처리1구) 및 비타민C 첨가제(처리2구)를 급여하였다. 개시체중은 255.9~256.8㎏에서 착수하였고, 출하 시 체중은 유의차는 없었으나 처리1구가 688.1㎏으로 대조구의 660.3, 처리2구의 634.0㎏에 비에 다소 높았으며 사료요구율은 11.19~13.80㎏으로 처리2구의 사료가 다소 많이 소요되었음

○ (1세부)

- 28개월령 출하시 육량등급에서 등지방 두께는 시험2구가 7.5㎜로 가장 얇았으나 등심면적은 처리1구가 85.9㎠로 가장 넓어 육량A 등급의 비율이 62.5%로 대조구의 55.5, 처리2구의 50%에 비해 다소 높았다. 근내지방도는 처리2구가 4.25로 가장 높았으며 처리1구는 4.13이었는데 처리구가 대조구의 2.78에 비해서 상당히 높은 경향이었고, 1등급이상 출현율은 처리구가 75.0%, 대조구가 22.2%로 3배 이상 높았다. 처리방법에 사용된 첨가제 급여비용을 제외한 조수입은 처리1구가 6,878.4천원으로 대조구의 6,331, 처리2구의 6,470.1 천원보다 많았으며, 이화학적 성상 역시 등심부위의 향미와 기호성 면에서 다른 처리구에 비해 유의적으로 좋은 성적을 나타냈다.

- 28개월 비육하여 출하한 수출용 한우육(대조구, 처리구 1, 처리구 2)에 대한 육질 및 관능 특성을 조사한 결과 일반 고급육 사료급여구(대조구)보다 반추위보호 아미노산 첨가제 및 비타민 C 급여구(처리구 1)가 전단력, 지방산 및 유리아미노산 조성 및 관능 특성(향미 및 전체기호도)에서 우수한 결과를 나타냄으로서 반추위보호 아미노산 첨가제 및 비타민 C 급여가 수출용 한우육 사양조건에 적합하였음
- 1++, 1++, 1 등급 한우육 등심, 채끝, 안심, 우둔육을 2℃에서 14일간 숙성하고 –18℃에서 냉동하여 유통하는 경우 6개월 이하에서 육색, 보수력, 가열감량 변화는 적었고 지방산화도 및 단백질변패도 증가로 품질은 다소 저하되었으나 전반적인 품질은 유지되었음. 냉동저장 9개월령에서는 백색도 및 적색도 감소, 가열감량 증가, 지방산화도 및 단백질변패도 증가 및 유리아미노산 함량 감소 등 지속적인 품질감소와 중국내 유통시스템을 고려했을 때 1++, 1++, 1 등급 한우육 4개 부위는 2℃에서 14일간 숙성하고 –18℃에서 냉동유통기간은 6개월 이내로 설정하는 것이 적절함

한우고기 수출환경에 대한 정량적 평가를 실시한 결과, 공통적으로 한우고기의 고급 부위가 수출경쟁력을 확보한 것으로 분석된다. 도출된 평가결과는 한우고기가 수출경쟁력을 확보한 도시 및 부위의 우선순위를 제시하고 있다. 또한 평가 결과를 토대로 5개 도시(홍콩, 상하이, 베이징, 도쿄, 오사카)의 개별 수출전략을 제시하였다.

Studies of Hanwoo beef export possibility to Japan, China and Honkong since 2010, suggested market informations, buyer`s systemic management, domestic slaughtering facility improvement, quarantine and hygiene conditions in the countries. As Hanryu culture is spreading with together Korean foods in the countries, Hanwoo beef export is interested in various divisions. So we surveyed the export conditions of Hanwoo beef and research of exporting customized meat production. The 25 yearling Hanwoo steers were examined to Control for high quality beef production program, Trt. 1. for amino acid + Vitamin C supplement and Trt. 2 for Vitamin C supplement to produce Hanwoo steer quality beef over 1st grade from 16 to 28 months of age. Intial body weight was 255.9~256.8㎏ and not significant in shipment body weight as 688.1㎏(Trt. 1), 660.3(Con.) and 634.0㎏(Trt. 2), Feed consumption rate of Trt. 2 was 11.19~13.80㎏ higher than other treatment. Backfat thickness in quantity grade at 28months of age shipment was 7.5㎜ in Trt. 2 but, loin area was 85.9㎠ in Trt. 2 more wider than other treatments. Marbling score of quality grade was 4.25 of Trt. 2 and 4.13 Trt. 1 more higher than 2.78 of Control.
□ Feeding effect of ruminant protective coating amono-acid and Vit C additives on meat quality and sensory properties of Hanwoo beef for export
This study was conducted to investigate the physico-chemical meat quality and sensory properties of Hanwoo steers (n=15) which were divided into 3 groups raised with 2 different feeding conditions (control, no additives; T1, ruminant protective coating amino acids and Vit C addives; T2 ruminant protective coating Vit C additives) during 16~28 months old. The animals were slaughtered and evaluated the meat quality and sensory properties of loin and top round muscles. In the free amino acid contents of loin muscle, T1 had significantly higher serine, alanine, lysine, phenylalanine, tryptophane and T2 had significantly higher histidine than the other treatments(p<0.05). T1 had the significantly lower Warner-brazler shear force (WBSF) values than the control and T2, however, there were no significant differences in sarcomere length and water holding capacity(p>0.05). T1 of loin muscle had significantly lower saturated fatty acids and higher total contents of monounsaturated fatty acids than the other treatments(p<0.05). In conclusion, T1 had the significantly lower Warner-brazler shear force (WBSF) values and higher scores of flavor-likeness and overall likeness in sensory evaluation when they were compared with control and T2(p<0.05).
□ Establishment of distribution condition of Hanwoo beef for export
The study was conducted to investigate the export market and establish the distribution condition of Hanwoo beef initially targeted on Hong Kong and China. Loin, striploin, tenderloin and top round muscles produced from 1++, 1+, 1 grade of Hanwoo steer beef were selected and meat quality changes were determined during 0, 7, 14 days of aging and 0, 3, 6, 9 months of freezing storage. Increasing the aging days, Warner-brazler shear force (WBSF) values of 4 cuts were decreased(p<0.05). Increasing the freezing periods increased, meat color (lightness, redness) and total contents of free amino acids
□ Establishment of Export Strategies of Hanwoo Beef to Major Partner Countries
The necessity of this study was raised based on the fact that the time has come for the policy that confronts the opening of the market in the near future and the stabilization of the Hanwoo Beef industry, as well as search for ways to enter the international market for the stable management of farms. The study for entry of Hanwoo Beef into the international market is in a relatively difficult position due to the quarantine-based import ban resulting from domestic animal diseases and relatively poor price competitiveness, thus calling for the study into the analysis of the local market and establishment of export strategies of Hanwoo Beef. Based on the objective analysis of Hanwoo Beef export policy and business that has been conducted so far, the purpose of the study is to establish export strategies of Hanwoo Beef into both the domestic and international markets, specifically Northeast Asian region(China, Hong Kong, Japan), through the analysis of export condition and feasibility of Hanwoo Beef.
□ Contents and Scope of the Study
Contents and scope of this study are in the following table, as to rank countries that are best suited for Korean beef export, to survey and analyze comprehensively and realistically marketing(4P) and features of individual cities of that coutnry, and to establish strategies for individual cities of major export countries.
Based on the result of the quantitative evaluation of the export environment of Hanwoo beef, it is concluded that high-quality parts of Hanwoo beef are commonly thought to have price competitiveness. Evaluated results that have been drawn suggest priority for cities and parts in which Hanwoo beef has export competitiveness. Also, based on the evaluated results, export strategies of individual cities(Hong Kong, Shanghai, Beijing, Tokyo, Osaka) are suggested.
□ Policy Proposal
First, it is proposed that division of works is to be launched for strategic and systematic execution of Hanwoo beef export, and Control Tower is to be established that has the responsibility to manage and control business promotion system and contents for integrated managenet.
Second, it is proposed that the budget is to be secured for Hanwoo beef export vitalization through revision of current laws regarding animal stock self-funds.
Third, it is proposed that three to four export-specific slaughterhouses are to be designated for each region and to possess highest-quality sanitation level, and systematic management to be carried out for minimization of problems that might arise from the slaughtering process.
Fourth, it is proposed that vitalization of Hanwoo beef export requires integrated certified brand mark, establishment of low-cost, customer-catered production and distribution systems, development of high-quality packing materials and designs, efficiency of export distribution, and other supports from various association and organizations.
