I. 소규모 절임 배추 생산 공정 표준화
○ 작형별 절임배추 생산 기술 제시
- 기후 변화에 의한 작형별 배추의 문제점 분석과 절임배추 제조 공정의 표준화를 위한 GMP, 작업표준 및 위생관리 기준 등 기반 기술을 확보하였음.

- 표준화된 절임배추 생산 기술 제시를 위하여 대규모 절임배추 제조업체이면서 협동기관인 화원농협에서는 작형별 절임배추(봄, 여름, 가을, 겨울)를 제공받아 0℃, 4℃, 10℃, 20℃에 저장하면서 실험을 수행하여 HACCP 제조업체와 일반 소규모 농가형 절임배추 제조업체에서 제조된 절임배추의 품질 특성을 분석하여 물리화학적 품질 지표와 감각과학적 품질 지표를 제시하였음.
- 소규모 절임업체를 위한 시설 기본 모델과 소규모 절임 모델시스템하의 작형별 절임배추 특성 조사를 위하여 소규모 절임배추 업체이면서 참여 기업인 괴산 시골절임배추 조합에서 가을 절임배추를 제공받아 절임배추 특성을 조사하였음.
- 김치 제조 및 품질 평가를 통해 절임배추의 품질 지표로 물리화학적 품질 기준 지표는 pH, 총산도, 경도, a value로 정하였고, 감각과학적 품질 지표 기준은 신맛, 신냄새, 아삭한 정도, 생배추맛, 노란색 선명도를 품질 지표로 정하였음.
- 작형별 절임배추 생산 기술은 소규모 절임배추 생산 공정 표준화와 연계하여 수행하였음.
○ 작형별 소규모 절임배추 생산 공정 표준화
- 작형별 절임배추 생산 기술 제시와 연계하여 절임배추 생산 공정 표준화를 위하여 대규모 절임배추 제조업체이면서 협동기관인 화원농협에서는 작형별 절임배추(봄, 여름, 가을, 겨울)를 제공받았고 1차년(2012년-2013년), 2차년(2013-2014년)도에 걸쳐 제공받아 0℃, 4℃, 10℃, 20℃에 저장하면서 실험을 수행하였음. 또 일반 소규모 농가형 절임배추 제조업체에서 제조된 절임배추를 직접 제조 또는 제공받아 연구를 수행하였음.
- 계절별(봄배추, 여름배추, 가을배추 및 겨울배추) 절임배추 제조 직후 pH와 적정산도, 가용성 고형분 함량, 총균수, 조직감 등의 차이가 있었음. 주성분 분석과 계층적 군집분석 결과 봄배추, 여름배추 그리고 가을과 월동 배추로 3그룹으로 나뉘었음.
- 절임배추의 저장ㆍ유통 온도 중 0℃ 절임배추의 저장 중 변화를 분석한 결과 절임배추의 제조 직후부터 물리화학적 특성 차이가 있었음. 0℃ 저장 중 적정산도는 가을 절임배추가 비교적 낮은 산도를 보였고, 가용성 고형분 함량은 월동배추가 비교적 높은 함량을 보였으며, 미생물 균수는 여름배추가 가장 높은 균수를 보였음. 즉 작형별로 물리화학적 품질 차이가 있었음. 각 품질 특성간의 상관관계 분석결과 유의적으로 양 또는 음의 상관성을 보이는 품질 특성이 많아서 절임배추 저장 중에 한 개의 품질 특성만 변화하는 것이 아니라 여러 가지 특성이 함께 변화한다는 것을 확인하였음. 전반적으로 계절별 절임배추의 품질 특성이 제조 직후부터 저장 중에도 계속 시료 간 품질 차이가 뚜렷하게 있음을 확인하였음.
- 작형별 절임배추 저장성 향상 기술 제시를 위하여 단기 유통시에는 HACCP와 제조 공정의 작업표준, 위생관리 기준을 준수하는 HACCP인증 절임배추 업체의 생산 기술로 제조된 절임배추를 0℃ 저장∙유통을 유지하면 약 10일 정도의 상품성이 유지된다는 것을 확인하였고, 절임배추 포장재로는 김치 기능성 포장재보다는 현재 김치 포장재와 진공도를 조절하여 저장을 하는 것이 가장 타당성 있는 것으로 사료되었음.
- 절임배추의 상품성 유지 기간 즉 저장성 연장을 위하여 현재의 절임배추 농도 1.5~1.8%를 기준으로 절임농도 조절, 압축 포장 방법, 저온 저장 온도 유지에 의한 절임배추의 물리화학적 및 미생물학적인 품질 특성 변화를 조사한 후 장기 저장용(약 60일) 최적의 절임배추 제조 방법을 제시하였음. 저장 절임배추의 김치 제조 및 품질 평가를 통해 약 60일 이상 저장이 가능하여 절임배추는 판매용 절임배추가 아니라 김치 공장에서 배추의 작황이 나쁠 때 저장 절임배추로 김치를 제조하여 판매할 수 있는 가능성을 확인하였음.
○ 소규모 절임업체용 절임배추의 제조 공정∙저장∙유통 매뉴얼 작성
- 작형별 절임배추의 최적 저장 및 유통 조건은 1, 2차년도 연구 결과 작형별 최적 저장 및 유통 조건을 확립함 : 단기 저장 절임배추 HACCP 인증 절임업체에서 작형별로 제조시의 규정 준수와 절임배추 제조 직후부터 온도 변화 없이 0℃에서 유통하면 약 10~14일 정도의 유통 기간을 예측할 수 있음.
- 소규모 절임배추 업체용 절임수 재활용 및 폐수 처리 방안은 장기 저장용 배추 절임방법은 절임배추의 최종 소금 농도인 1.5% 내외의 소금만 필요하고, 일반 절임배추 제조업체에서 사용하고 있는 절임수 농도 10-14%와 비교하여 절임수 문제는 거의 발생되지 않아 활용 가치가 있을 것으로 확인됨.
- 절임배추 생산 공정 표준화를 위한 최적화 기술의 현장 적용 실험 및 평가는 작형별 절임배추 실험은 협동기관인 해남 화원농협과 김장철에는 참여 기업인 괴산 시골절임배추 조합 소속인 100여평 규모의 농가형 절임배추 제조 현장에서 작형별 절임배추 현장 적용과 실험실에서 동시에 이루어졌고, 이를 통해 생산 공정 표준화와 저장∙유통 매뉴얼을 제시하였음.
제 2세부 : 배추의 현장 적용형 작형별 저장 기술 개발
제 3협동 : 산업적 규모의 현장 저장 시험(세부-1, 세부-2와 연계하여 과제 수행)
○ 작형별 저장생리특성 조사 : 봄, 여름, 가을 및 겨울배추 4종에 대한 호흡 및 에틸렌 발생속도, 빙결점을 조사한 결과, 배추의 저장성은 증산작용에 의한 수분손실에 기인하는 것으로 판단하고 증산적용을 억제할 수 있는 방향으로 접근함.
○ 현행 배추 저장의 문제점 도출
- 기존 차압예냉 : 품온저하에 10시간 이상 소요되므로 현장적용 부적합. 순간 처리 가능한 전처리 기술 개발 필요
- P-box : 배추보다 적은 제원으로 함입시 조직손상, 박스 적재저장 중 압상 및 곰팡이 발생의 원인이 되므로 배추크기에 맞는 배추전용 P-box 개발 필요
- 배추함입방법 : 현행 뿌리 하향식 함입방법은 응축수 발생시 수적이 조직내로 침입하여 짓무름의 원인이 되므로 뿌리 상향식 함입방법 권장
- MAP : 현장 작업이 지난하고, 또한 수증기 투과성이 낮은 LDPE사용으로 저장고 이동시 과다한 결로형성으로 제품손상 높음. 새로운 MAP 방법 개발 필요
○ 작형별 전처리 기술의 개발
- 단기 집중 출하되는 배추의 작업효율을 고려하여 단시간 처리 가능한 순간 건식열처리 조건(45℃, 2분)을 확립
- 차압예냉과 비교한 결과 차압예냉은 20.84± 1.19%, 순간 건식열처리는 22.24±1.17%의 정선손실률을 나타내어, 차압예냉과 유사한 효과를 가지며, 작업시간 대폭 감축(차압예냉 10시간 이상)
- 2014년 2월 12일 수확한 월동배추 대상 열처리 후 MA저장실험 결과, 4개월 저장(정선손실율 88.51±0.57%, 대조구 대비 136% 향상) 가능
- 현장 실증실험 위해 컨베어 타입의 터널식 열풍장치를 시작품 제작함.
○ 작형별 저장기술 개발
- 배추 뿌리 코팅기술, 배추뿌리길이 조정기술, 다공성천연석 피복기술을 배추뿌리상향 함입저장 및 MAP저장기술을 단독 또는 병용 처리한 결과, 배추 뿌리부위를 상향 적입한 후 다공성천연석 피복방법과 배추뿌리 상향 함입 후 다공성천연석 피복 및 MAP저장 병용처리가 각각 18.31±0.85%, 15.40±0.66%의 정선손실율로 가장 효과적인 저장방법으로 나타남.
- 배추뿌리 상향 함입 후 다공성천연석 피복 및 MAP저장 병용처리는 가을배추 대상 150일까지 저장성을 연장할 수 있었음
- 현장형 MA포장기술 개발: 다공성천연석 피복 후 LDPE 포장방법과, P-box가 적재된 pallet 단위로 옆면만 PVC wrapping 방법을 비교/현장실증실험 결과, pallet 측면 PVC wrapping 방법은 포장지 내부 상대습도와 정선손실율 측면에서 LDPE 필름포장구와 유사한 결과를 나타내었음. 따라서 현장에서의 MAP방법은 랩핑기에 의해 pallet 단위로 기계 포장작업이 가능하여 인력에 의존하여야 하는 MAP방법을 대체할 수 있었음.
- 배추 수직적재형 컨테이너 구조 및 용기제작 : 배추크기와 P-box의 제원이 상이함에 따라 발생하는 조직손상을 억제하고, 기존 물류체계(pallet size, 11x11)를 준수하기 위해 3년간 배추 크기분포를 측정한 후 배추 전용 목업 상자를 제안, 제작, 실증실험을 수행하였음. 배추 mock-up상자의 제원은 54.0x36.5x42.0cm로 기존 P-box보다 높이가 9.5㎝ 크게 제작되었음.
○ 개발 저장기술의 실증실험
- 월동배추 : 2015년 2월 27일 월동배추 수확말기에 시료 확보 후 45℃ㆍ2분간 열처리, 다공성 천연석 피복 및 LDPE 필름 포장하여 0℃에 저장한 결과, 짓무름과 곰팡이 발현이 최외각 겉잎에는 발생하나, 겉잎 제거시 저장 4개월 동안 생배추로서의 상품성을 유지하는 결과를 나타냄. 동 결과는 기존 관행방법 대비 저장기간을 2배 이상연장하고 정선 손실율을 1.8배 억제하는 효과를 나타내었음.
- 봄배추 : 2015년 6월 2일 봄배추 수확말기의 시료구입 후 45℃ㆍ2분간 열처리, 다공성 인공석 피복 및 LDPE 필름 포장하여 0℃에 저장한 결과, 기존관행방법은 60일 이내 상품성 소실한 반면 개발기술은 저장 100일 경 이취로 인한 상품성 소실결과 나타냄. 저장 100일 후 정선손실율은 저장초기 18.07%에서 24.39%로 증가하였으나 대조구 대비 약 2배 정선 손실율 억제효과 나타냄.
제 1협동 : 배추 저장 장해 제어 기술 개발
○ 작형별 배추 저장 중 저장장해 발생원인 구명
- 재배환경에 따른 배추의 작형별 저장 중 저장장해 발생특성 파악하여 저장기한에 가장 큰 영향을 미치는 증상이 깨씨무늬증이었음.
- 깨씨무늬증은 색소의 축적, 침착 현상이 아닌 것으로 사료됨.
- 깨씨무늬증의 발생에 세포 내 암모늄의 함량이 큰 영향을 미치는 것으로 나타남.
- 암모늄을 사용하지 않고 질산만을 사용한 양액재배 배추는 깨씨무늬증상 발달이 상대적으로 느림.
○ 작형별 배추의 저장장해 발생억제 기술 개발
- 질산태 질소를 관주 처리하여 깨씨무늬 증상 완화를 기대할 수 있음.
제 2협동 : 신선편이 배추 저장 기술 개발
○ 신선편이 배추제품의 품질 현황 및 개선 방안
국내의 채소류는 신선편이용으로 가공 비율이 선진국과 비교하면 지극히 낮아서(2%) 신선편이 채소 가공량이 증가할 것으로 추정되고 있고, 품목별로는 맛과 기능성, 외관 등이 좋은 컬리플라워, 비트, 로즈, 허브류, 약용식용식물류 등과 같은 새로운 품목이 선호될 것으로 예상됨. 신선편이 농산물의 수요가 늘어나고 안정된 수급의 균형이 이루어지기 위하여 제품의 안전성을 보장하고, 선도유지 기술, 다양한 디자인과 포장 등으로 신규 상품화 기술 개발이 요구됨.
○ 최소가공 배추제품의 단위 공정 기술 개선
가공 배추 제품의 단위 공정 기술 개선을 위해 절단배추의 예비가열처리, 갈변방지제 첨가, 포장 필름 종류에 따른 이화학적 품질 특성 및 선도 측정을 하였음. 절단 배추를 40℃에서 4시간 예열처리구(HS 4)가 중량감소율, pH 변화, PPO, POD, PAL 활성이 가장 적었음. 갈변 방지제인 Ca처리구는 0.5% ESP-2가 가장 좋은 결과를 보였고, 포장재에 따른 절단배추의 저장기간 중 이화학적 변화는 큰 차이가 없었으나, 종합적으로 PPO가 가장 우수하였음.
○ 최소 가공배추의 냉동 저장 기술 개발
냉동 및 해동기술과 hybrid technology처리에 의한 이화학적 특성을 조사하고 절단배추로 김치를 제조하여 단기저장 조건의 실증 실험과 그 효과를 조사하였음. CAS 냉동이 중량감소율과 가용성 고형분, 적정산도 변화는 다른 냉동방법에 비해 적은 경향을 나타내었음. 주사전자현미경으로 관찰한 절단배추의 미세 구조의 경우 CAS 동결 조건에서 그 조직이 가장 치밀하고 일정한 분포 양상을 보인 반면 완만 동결은 세포벽이 파괴되어 조직의 분포가 불균일하였음. 절단배추의 hybrid technology 처리 후 단기 저장 중 HT1이 다른 처리군에 비해 선도유지에 효과적이었고, 난각 칼슘과 예비가열 처리를 병용한 hybrid 처리에 의한 절단배추의 단기저장 효과를 조사한 결과 절단배추를 hybrid technology 처리시 대조구 대비 품질이 양호한 배추 김치(맛김치) 제조가 가능하였음.

○ Evaluation of salted Kimchi cabbage production technology according to cropping pattern
- Problems caused by climate change for Kimchi cabbage according to cropping pattern were analyzed, and foundation technologies, including GMP, work standards, and hygiene management standards, were established for standardization of the production process for salted Kimchi cabbage.
- Panel members to perform scientifics of salted Kimchi cabbage were selected and trained, and 20 sensory equality characteristics for commercialized salted Kimchi cabbage were established.
- In order to develop standardized production technology for salted Kimchi cabbage, Hwawon Nonghyup, a large-scale salted Kimchi cabbage manufacturer and collaborative agency, was provided with salted Kimchi cabbage samples from different cropping patterns (spring, summer, autumn, and winter) from HACCP manufacturers and general small-scale farm manufacturers. They performed experiments on storage, comparing storing at 0℃, 4℃, 10℃, and 20℃, and analyzed the quality characteristics of salted Kimchi cabbage by measuring physicochemical quality indices and sensory quality indices.
- In order to investigate basic facility models for small-scale manufacturers of salted Kimchi cabbage and the characteristics of salted Kimchi cabbage according to cropping pattern in a small-scale salting model system, the Goesan Countryside Salted Kimchi Cabbage Association, a participating small salted Kimchi cabbage company, was provided with salted autumn Kimchi cabbage samples, and they evaluated their characteristics.
- The physicochemical quality indices for salted Kimchi cabbage determined through preparation and quality evaluation of kimchi include pH, total acidity, hardness, and a value, and the sensory quality indices include sour taste, crunch level, fresh Kimchi cabbage taste, and yellow clarity.
- Development of production technology for salted Kimchi cabbage according to cropping pattern was performed in connection with the standardization of the small-scale production process for salted Kimchi cabbage.
○ Standardization of the small-scale production process for salted Kimchi cabbage according to cropping pattern
- To standardize the production process for salted Kimchi cabbage in connection with the development of production technology according to cropping pattern, Hwawon Nonghyup, a large-scale salted Kimchi cabbage manufacturer and collaborative agency, was provided with salted Kimchi cabbage samples from different cropping patterns (spring, summer, autumn, and winter) through the 1styear (2012-2013) and the 2ndyear (2013-2014), and they performed experiments on storage, comparing storing at 0℃, 4℃, 10℃, and 20℃. In addition, they also performed a study to compare salted Kimchi cabbage that they directly prepared or that was provided by general small-scale farm manufacturers of salted Kimchi cabbage.
- There were differences in pH, titratable acidity, soluble solid contents, total number of bacteria, and firmness among the freshly prepared salted Kimchi cabbage samples according to season (spring Kimchi cabbage, summer Kimchi cabbage, autumn Kimchi cabbage, and winter Kimchi cabbage). The major component analysis and hierarchical cluster analysis results indicated dividing the samples into three groups: spring Kimchi cabbage, summer Kimchi cabbage, and autumn and winter Kimchi cabbage.
- In the study on storage and distribution temperatures, when the changes in salted Kimchi cabbage after storage at 0℃ were analyzed, there were differences in the physicochemical characteristics compared to freshly prepared salted Kimchi cabbage: titratable acidity during storage at 0℃ was relatively lower in salted autumn Kimchi cabbage, soluble solids contents were relatively higher in winter Kimchi cabbage, and summer Kimchi cabbage had the highest number of bacteria. In other words, there were differences in the physicochemical qualities according to cropping pattern. When the correlations among each quality characteristic were analyzed, many quality characteristics showed significant positive or negative correlations; thus, many characteristics, not one specific quality characteristic, of salted Kimchi cabbage changed during storage. In general, the quality characteristics of salted Kimchi cabbage samples that were stored distinctively differed from those of samples prepared immediately according to season.
- For the development of technology to improve the storability of salted Kimchi cabbage according to cropping pattern, it was found that if salted Kimchi cabbage products were prepared with the production technologies used by HACCP certified salted Kimchi cabbage companies that comply with the work standards for the production process and the hygiene management standards of HACCP and were maintained at 0℃ for storage and short-term distribution, marketability was maintained about for 10 days. Current kimchi packaging materials, rather than functional kimchi packaging materials, in combination with adjusted vacuum levels were most effective for the storage of salted Kimchi cabbage.
- To extend the marketability maintenance period of salted Kimchi cabbage or to extend storability, changes in the physicochemical and microbiological quality characteristics of salted Kimchi cabbage caused by adjusting the salting concentration from the 1.5-1.8% level that is currently used for salting, using pressed packaging methods, and maintaining cold storage temperature were investigated to determine the best production method for the long-term storage (about 60 days) of salted Kimchi cabbage. The quality evaluation results indicated that for a storage period of more than 60 days, the stored salted Kimchi cabbage should be used to prepare kimchi. Thus, when the production yield of Kimchi cabbage is low, the potential of using stored salted Kimchi cabbage to prepare kimchi, instead of selling it, in kimchi factories was identified.
○ Preparation of a manual for the production process, storage, and distribution of salted Kimchi cabbage for small-scale salted Kimchi cabbage-producing companies
- The optimal storage and distribution conditions according to cropping pattern were established through studies performed in the 1st and 2nd years. If the cabbage is produced following the HACCP certified manufacturer’s in structions for salting Kimchi cabbage according to cropping pattern and distributed at 0℃ without changes in temperature starting immediately after production, the short-term storage of salted Kimchi cabbage can be expected to be maintained for about 10-14 days in distribution.
- Regarding the need to recycle saline water and treat waste water by small salted Kimchi cabbage companies, the Kimchi cabbage salting method for long-term storage requires only about 1.5% of salt, the final salt concentration in salted Kimchi cabbage, which rarely causes saline contamination problems during washing compared to using the 10-14% saline concentration generally used by salted Kimchi cabbage manufacturers. Thus, these measures are not expected to be applicable.
- For the field application test and evaluation of optimization technology for the standardization of the production process for salted Kimchi cabbage, salted Kimchi cabbage tests according to cropping pattern were conducted in Haenam Hwawon, a collaborative institution, and on about 330 m2 of salted Kimchi cabbage preparation fields of farmers in the Goesan Country side Salted Kimchi Cabbage Association, a participating company, during the kimchi-making season. During these tests, the technology for salted Kimchi cabbage according to cropping pattern was tested in the fields and laboratories at the same time. These tests led to the standardization of the production process and development of a manual for storage and distribution.
Subproject II : Development of field-applicable storage technology for Kimchi cabbage according to cropping pattern

○ Investigation of the physical characteristics during storage according to cropping pattern: By evaluating the respiration levels, ethylene generation rates, and freezing points of the four types of Kimchi cabbage (spring, summer, autumn, and winter), it was determined that the storability of Kimchi cabbage was dependent on water loss by transpiration; thus, an approach to suppress transpiration was developed.
○ Identification of problems in the current Kimchi cabbage storage process
- Existing pressure cooling systems: Since it takes more than 10 hours to reduce the commodity temperature, these systems are inappropriate for field application. Instead, it is necessary to develop an instant pre-treatment technology.
- P-box: When contained in a box smaller than a Kimchi cabbage, tissue damage and pressure damage and fungal generation during stacked storage can result, so it is necessary to develop a P-box specifically for Kimchi cabbage that are the correct size.
- Kimchi cabbage containment method: The current root-downward containment method can result in the penetration of water into tissues when water condensation occurs, causing severe damage to the leaves of Kimchi cabbage. Thus, a root-upward containment method was recommended.
- MAP: The use of an LDPE that makes field work difficult and has low vapor permeability causes excessive dew condensation when moving between storage houses, resulting in high rates of damage to products. Thus, it is necessary to develop a new MAP method.
○ Development of pretreatment technology according to cropping pattern:

The porous natural stone coating technology after Kimchi cabbage root-upward containment and a combined treatment with porous natural stone coating and MAP storage technologies after Kimchi cabbage root-upward containment resulted in trimming loss rates of 18.31±0.85% and 15.40±0.66%, respectively, indicating that these are the most effective storage methods.
- The combined treatment with porous natural stone coating and MAP storage technologies after Kimchi cabbage root-upward containment could extend the storability of autumn Kimchi cabbage up to 150 days.

- Structure of the Kimchi cabbage container for vertical stacking and container fabrication: In order to prevent tissue damage caused by the difference in the size of Kimchi cabbage and the P-box and to comply with the existing chain system (pallet size, 11x11), the size distribution of Kimchi cabbage was measured for 3 years, and then a mock-up box specifically for Kimchi cabbage was proposed and fabricated, followed by a verification experiment. The dimension of the Kimchi cabbage mock-up box was 54.0x36.5x42.0 cm, which was larger than the existing P-box by 9.5 cm.
○ Verification testing of developed storage technology
- Winter Kimchi cabbage: Winter Kimchi cabbage samples were collected on February 27, 2015, at the end of the winter Kimchi cabbage harvest season and subjected to heat treatment at 45℃ for 2 min, coated with porous natural stones, and packed in LDPE film, followed by storage at 0℃. As a result, while most of the outer leaves showed severe wounding and fungal infection, the rest of the Kimchi cabbage maintained its marketability as fresh Kimchi cabbage for 4 months. These results corresponded to two times longer storage period and 1.8 times lower trimming loss rate compared to those of the existing conventional method.
- Spring Kimchi cabbage: Spring Kimchi cabbage samples were purchased on June 2, 2015, at the end of the spring Kimchi cabbage harvest season and subjected to heat treatment at 45℃ for 2 min, coated with porous natural stones, and packed in LDPE film, followed by storage at 0℃. As a result, while the samples treated using the existing conventional method lost marketability within 60 days, the samples treated using the developed technology lost their marketability after around 100 days of storage due to an off-flavor. Although the trimming loss rate after 100 days of storage increased from an initial rate of 18.07% to 24.39%, it was about 2 times lower than the trimming loss rate of the control.
Joint project I : Development of field-applicable damage control technology for Kimchi cabbage
○ Identification of the causes of damage during storage of Kimchi cabbage according to cropping pattern
- The characteristics of damage to Kimchi cabbage during storage according to cropping pattern depending on growing conditions were identified, and the symptom that most influenced the storage period was pepper spot symptom.
- It did not seem that pepper spot symptom was caused by an accumulation or deposition of pigments.
- It was found that cellular ammonium content strongly affected the occurrence of pepper spot symptom.
- pepper spot symptom develops relatively slower on Kimchi cabbage grown by hypotonic culture using nitrate without ammonium.

Joint project II : Development of storage technology for fresh-cut Kimchi cabbage
○ Situation and methods to improve the quality of fresh-cut Kimchi cabbage products
Since the processing rate (2%) of domestic vegetables used for fresh-cut products is extremely lower than those in developed countries, it appears that the processed amount of fresh-cut vegetables would increase. In addition, new items, including cauliflower, beet, rose, herb, and medicinal edible plants, are expected to be preferable due to superior qualities such as taste, functionalities, and appearance. To promote the demand for fresh-cut agricultural products and to balance supply and demand, it is necessary to guarantee the safety of the products and to develop freshness maintenance technology and new commercialization technology with various designs and packaging.
○ Improvement of the unit process technology for minimally processed Kimchi cabbage products
To improve the unit process technology for processed Kimchi cabbage products, tests were performed as follows: cut Kimchi cabbage samples were subjected to a preheat treatment, anti-browning agents were added, and the physicochemical quality characteristics and freshness for different packaging film types were measured. The cut Kimchi cabbage samples that were given the preheat treatment at 40℃ for 4 hours (HS 4) showed the lowest values for weight loss, pH change, and activities of PPO, POD, and PAL. Of the Ca-treated groups, which were used as an anti-browning treatment, 0.5% ESP-2 had the best result. Despite there being no significant physicochemical differences among the different packaging materials during the storage period of cut Kimchi cabbage, PP showed the best result in general.
○ Development of freezing storage technology for minimally processed Kimchi cabbage
Physicochemical characteristics were assessed following treatments using freezing and thawing technology and hybrid technology. Kimchi was prepared with cut Kimchi cabbage, followed by a verification experiment on the short-term storage conditions and an evaluation of the effects. The CAS freezing method tended to result in less weight loss, less changes in soluble solids, and an optimal acidity for cut Kimchi cabbage than other freezing methods. When the microstructures of cut Kimchi cabbage were observed by scanning electron microscopy, tissues treated with the CAS freezing method showed the most dense and regular distributions, whereas slow freezing broke cell walls, resulting in irregular tissue distributions. During the short-term storage of cut Kimchi cabbage after treatment with hybrid technology, HT1 was more effective in maintaining freshness than other treatment groups. Cut Kimchi cabbage samples were subjected to hybrid treatments using a combination of eggshell calcium and a preheat treatment, and the short-term storage effects were evaluated. The results indicated that the Kimchi cabbage kimchi (mag-kimchi) prepared using cut Kimchi cabbage and the hybrid technology treatment had a higher quality than that prepared using the control treatment.
