1. Basic Investigation and Research of Kimchi Culture
Resources were collected and analyzed at domestic and international levels. The domestic analysis results were classified by historical time periods, social class, and regional variations. The oldest kimchi recipe, made with salted fish sauce, and Korean poems written in classic Chinese about kimchi in the Joseon Dynasty, shed light on when kimchi was eaten, and the supply of its ingredients. Korean kimchi’s uniqueness and distinguishing features were identified through comparisons of Korean kimchi against Chinese pao cai, and Japanese kimuchi in terms of their different preservation methods. Regional specialty kimchi recipes were studied to identify local kimchi variations that may have been disappearing over the years. Analysis of the economic history of both South and North Korea was also undertaken to summarize features and characteristics of kimchi in Seoul, Gwangju, and Jeollanam-do that differ from those in North Korea. Differences in kimchi could be seen between the various social classes in the Joseon Dynasty, such as the royal family, head families (jong-ga), the nobility, Buddhist monks, and commoners. At the international level, regional distinctiveness in food and culture were primarily gathered, and some regional bases for cultural diffusion of kimchi were selected as potential opportunities. Research and analysislooked at the possibilities of localizing kimchi recipes or developing kimchi-fusion cuisine, other countries’ existing salt-cured vegetable dishes, the spread and growth of various ethnic foods, and kimchi dishes sold at Korean restaurants overseas. In order to build kimchi localization strategies, the study reviewed alternative recipes that make kimchi more manageable, plus their respective sales performances, and investigated the success of Tex-Mex (Mexican-inspired food in Texas).
2. Strategic Application and Content Development for Kimchi Culture
Based on the findings from the previous research stage, China (Fujian Province and Hubei Province), Europe, and the U.S. were chosen as the top potential kimchi markets. Qualitative research, including in-depth interviews and focus group interviews, was conducted, resulting in localization strategies and the development of new recipes. These new recipes and kimchi products will be promoted and sold through two major Korean kimchi festivals: Seoul Kimchi Culture Festival and Gwangju World Kimchi Festival. Kimchi is no longer perceived merely as a Korean food staple, but has gradually become a symbolic cultural resource garnering increased public attention. The demand for kimchi-related content is increasing in many areas, including public cultural events, education, and even tourism, and local authorities and food institutes are also positive with regard to expanding kimchi-themed events and festivals. These cultural contents, developed and customized for each event and festival, contribute to the promotion of kimchi and its utilization in relevant industries, by directly or indirectly supporting such events and festivals across the nation, including 13 kimchi support businesses, 12 kimchi experience centers, 12 kimchi culture events, 8 kimchi culture programs, and 7 Korean culture promotions.
3. Kimchi Cultural Diffusion
Kimchi culture content promotions were conducted online and offline. Online resources and the WKISS (World Kimchi Information Service system, https://wkiss.wikim.re.kr) database have been added to the Open Data Portal (https://www.data.go.kr) and kimchi encyclopedias and ancientcookbooks have been made accessible online in cooperation with national search engines. Search engine optimization was also conducted in order to increase the number of views and visitors tothe websites. Public cultural events such as hands-on experiences making kimchi have been staged at home and abroad as part of offline promotion efforts. These events intend to raise the perceived value of kimchi as a cultural heritage and boost kimchi consumption, to counter the steady decreaseresulting from demographic changes. Large-scale events and expositions were hosted in collaboration with other institutes in the country, as well as overseas events introducing traditional Korean kimchi and fusion recipes. Overseas promotions included kimchi-centered events and exhibitions held atforeign embassies and councils, as well as co-promotions with private organizations and influentialfigures who are enthusiastic about expanding the reach and profile of kimchi in their region. These organizations and individuals volunteer to launch kimchi events and festivals in major countries and cultural hub cities. Our kimchi content and resources are regularly used for such cultural fairs,solidifying the relationships with the cities and spreading Korean kimchi culture.
