The purpose of this study was to investigate the effect of wheat flour with different alginate concentration [0, 0.5, 1.0, 1.5% (w/w)] with respect to the pasting characteristics, gelatinization temperature, freeze-thaw stability, noodle quality under cooking conditions, texture properities and sensory evulation. Although three different types (different viscosity levels) of alginate were commercially produced, we selected the low viscosity type because it showed the best noodle quality from the pre-experiment. The 4 samples were prepared by wheat flours mixed individually with 0(control), 0.5(A-0.5), 1.0(A-1.0), 1.5(A-1.5)% of low viscosity alginate. The particle size distribution of wheat flour ranged from 20-30 ㎛ to 100 ㎛ and showed bimodal distribution. Mean and median diameter of wheat flour were 57.18 ㎛ and 51.90 ㎛. respectively. The surface area of wheat flour was 7010 cm2/mL. In RVA (Rapid Visco Analyzer), pasting temperature, peak viscosities, holding viscosities and final viscosities showed decreasing tendency with the increase of alginate concentration, while the break down and set back characteristics showed non trend with alginate concentration. In Farinograph, the water absorption and development time significantly (p<0.05) increased, but the stability and degree of softness significantly (p<0.05) decreased with the increase of alginate concentration. Against repeated freeze-thawing treatments (from 1 to 7), the gel was more effective with the increase of alginate concentration. At the end of the first cycle, the percentage water separation was significantly (p<0.05) decreased with the increase of alginat concentration. At the end of the seventh cycle, the percentage water separation for adding 1.5% alginate was decreased more 10% than compared with the control. Therefore, the alginate may be good ingredient in frozen food, for example frozen noodle, which may prevent degradation and also give better product stability. In color measurement of dried and cooked noodle, as the alginate increased, yellowness (b) significantly (p<0.01) increased, but redness (a) and the Lightness (L) significantly (p<0.01) decreased. The color of cooked noodle samples showed a lower value than it of the dried noodle. At the cooking quality examination of noodle, the weight of cooked noodle was significantly (p<0.05) decreased but the turbidity of soup significantly (p<0.05) increased with the increase of alginate concentration The addition of alginate was not effective on the volume of cooked noodle. The extensibility (mm) was determined in tension mode by recording the distance at the extension limit. The extensibility (mm) of cooked noodle significantly (p<0.05) increased in the ranged from 49.40 to 83.58 with the increase of alginate. In TPA(texture propile analysis), the hardness of cooked noodle showed decreasing tendency with the increase of alginate concentration while cohesiveness and springiness characteristics showed non trend with the increase of alginate concentration. From sensory evaluation by raking test for cooked noodle, all characters (clarity, gloss, color, texture, taste, acceptability) of control showed a lower score than with the increase of alginate concentration. The taste, cohesiveness and acceptability characteristics showed non trend as the alginate increased. Significantly high correlation were found between hardness and adhesiveness in mechanical texture and hardness in sensory analysis. From the results, data of freeze-thawing treatment drive on to conclude that alginate is required to be used as improver in frozen food.
