A survey for aflatoxin B_(1) (AFB_(1)), fumonisin B_(1) (FB_(1)), ochratoxin A (OTA) and zearalenone (ZEN) was conducted on 127 samples that included 30 barley, 32 barley-based foods, 18 corn and 47 corn foods, randomly collected during 1998-1999 in Seoul, Korea. The presence of mycotoxins was analyzed by direct competitive enzyme-linked immunosorbent assay (ELISA), and the all-positive samples from ELISA were confirmed using high performance liquid chromatography (HPLC). Potential risks of these mycotoxins on human health were also assessed. Naturally occurring AFB_(1), FB_(1), OTA and ZEN were found in 4/32 (12%), 2/32(6%), 4/32 (12%) and 12/32 (38%) samples of barley-based foods with an average of 26, 16, 9 and 40 ng/g, respectively. AFB_(1), FB_(1) and ZEN in corn-based foods were detected in 4/47 (8%), 9/47 (19%) and 9/47 (19%) samples with the average being 20, 74 and 22 ng/g, while OTA was not detected in any corn-based foods. No AFB_(1), FB_(1) or OTA was detected in barley and corn samples. ZEN was only found in 10/30 (33%) and 4/18 (22%) barley and corn samples with an average of 36 and 5ng/g, respectively. The correlation factor (r^(2)) obtained by ELISA and HPLC were 0.81 (n=8, AFB_(1)), 0.85 (n=7, FB_(1)), 0.87 (n= 4, OTA) and 0.86 (n=31, ZEN), respectively. This is the first report on the natural co-occurrence of AFB_(1) and FB_(1) in barely and corn foods in Korea. The estimated Korean probably daily intake (PDI) of AFB_(1) via foods calculated from several survey data, was higher than the estimated tolerable daily intake (TDI) based on epidemiological data. But AFB_(1) exposure has not been thought as a contributory risk factor for Korean liver cancer incidence. All the Korean PDI of FB_(1), OTA and ZEN via foods were lower than the TDI based on toxicological data. AFB_(1) and FB_(1) originating from barley or corn survive malting and alcohol fermentation process, whereas about 20 and 30 percentages of OTA and ZEN are recovered after alcohol fermentation, respectively. The mutagenicity of AFB_(1) did not disappeared even after being malted and fermented.
