This work is concerned with the development of the pigment of flowers as a food material. We have chosen the red rose, and analyzed rose petals' chemical compositions as a basic investigation. To check the possibility of using the rose pigment as a food additive we have extracted the pigment from a rose and examined all the factors for stability. In addition, we have established the optimum condition for the pigment extraction and studied the change and the stability of the pigment during the storage, performing the sensory evaluation. The results obtained are as follows: 1. Proximate compositions (dry basis) of rose petals were crude protein 16.5%, crude fat 3.1%, crude ash 5.5%, and crude fiber 15.8%. The moistures of fresh and freeze-dried roses were 87.3% and 5.7%, respectively. Contents of detected fructose, glucose and xylose were 74.3, 49.6 and 16.6 mg/g, and those of β-carotene, ascorbic acid, and α-tocopherol were 205.2㎍/100g, 129.5 mg/100g and 6.0mg/100g, respectively. 17 amino acids were analyzed, among which aspartic acid was 4,007.3mg/100g, glutamic acid was 1,114.8mg/100g and lysine was 672.6mg/100g. Among the minerals, the content of K is the heighest, evaluated at 1,981.7mg/100g. 2. The rose pigment was easily solved by polarized solutions. The rose pigment solution turned into blue when 0.1N NaOH was added, and restored its original color, red, when 0.1N HCl was added, which confirms that the rose pigment is anthocyanin. Besides, the pigment solution reacted positively to the qualitative test for the cyanidin pigment. 3. In examining the stability of the pigment, the residue of the pigment noticeably decreased with the increase of the pH and the temperature, and among free sugars (fructose, glucose, sucrose) the addition of fructose made the residue the lowest. With the addition of organic acids the samples exhibited the hyperchromic effect throughout the period of the storage. The pigment residue decreased when the amount of the ascorbic acid increased. In the sensory evaluation of the rose beverages, the color of the rose beverages was well preserved until 60 days at 5℃(8.3/9.0), but the change of the color during the same period was evaluated to be large at 35℃ (4.6/9.0). The sensory turbidity proved to be unchanged at 5℃ (8.8/9.0), although its change was considerable at 35℃ (6.0/9.0). For the mayonnaise colored with the crude pigment of the rose, the values of L and a gradually reduced as the storage period increased, but the value of b was found to increase. In terms of the peroxide value (POV), the rose crude pigment-colored mayonnaise(RCM) stored at 5℃ was almost the same as a typical mayonnaise, while the POV of the RCM stored for 8 weeks at 35℃ was 4.2~5.5meq/kg (depending on the concentration of the pigment), which is about a half of the POV of the mayonnaise without the rose pigment(control). 9. The result of the sensory evaluation of the RCM showed that the 0.4% RCM is the best in color, flavor, taste and overall acceptability.
