Therefore, the objective of this study was to increase the amounts of insoluble rice protein and rice dietary fiber in RBP by hydrolyzing remaining carbohydrates in RBP using various commercial carbohydrases. Six commercial carbohydrases (Termamyl, Fungamyl, Liquozyme, Promozyme, Celluclast, and Viscozyme) were used to hydrolyze carbohydrate in RBP. The rice wine meal (RWM), defatted rice bran (DRB) and rice syrup meal(RSM) were hydrolyzed with carbohydrases at each optimum pH and temperature. Amylolytic enzymes (Termamyl, Fungamyl, Liquozyme) showed the highest protein concentration in RWM (272.8 ~ 368.4 mg/g) and DRB (193.6 ~ 238.1 mg/g). Cellulolytic enzymes (Celluclast, and Viscozyme) showed relatively low protein concentration and Promozyme, which has pullulanase activity, showed the lowest protein concentration. Overall, insoluble protein content of RWM increased from 187.1 mg/g to 368.4 mg/g after hydrolyzation with Liquozyme. This study provides the basic information of RBP and its hydrolyzation behavior with various commercial carbohydrases.
