Over all the amount of phenol substrates increased in fermented gastrodia, and especially ergothioneine level was dramatically enhanced up to 6.1mg·g-¹. Antioxidant activities were investigated to verify utility value of gastrodia for functional food and cosmetics. Fermented gastrodia extract showed higher antioxidant activities than raw extract. In order to investigate gastrodia as functional food, inhibition effect of angiotensin converting enzyme (ACE) and xanthin oxidase (XOase) was tested among water extracted raw gastrodia (WERG), water extracted fermented gastrodia (WEFG), 70% ethanol extracted raw gastrodia (EERG) and 70% ethanol extracted fermented gastrodia (EEFG). ACE activity was dramatically inhibited by EERG while there was no difference of AOase inhibition between EEFG and EERG. Nerve growth factor (NGF) activity was measured and indicated about 40% increased neurite growth effect. Inhibition of elastase and tyrosinase activities was evaluated for wrinkle improvement and whitening effect respectively. Interestingly, all gastrodia extracts showed higher inhibitory effect on elastase activity rather than tyrosinase activity and astringency. When mouse ear was infected by 12-O-tetradecanoylphorbol-13-acetate (TPA), mouse ear was swollen and caused inflammation. This TPA-induced inflammation was surprisingly improved by 250μg·mL-¹ fermented gastrodia treatment. Infected ear was become thinner due to reduced water content by fermented gastrodia treatment. In this experiment, we concluded that physiologically active compounds of gastrodia were increased by fermentation. This fermented gastrodia can be utilized for functional food or cosmetics in the future.
