본 연구는 스페인과 이탈리아 생햄 제조공정을 비교 조사하면서 우리나라 실정에 적합한 한국형 생햄을 개발하고자 하였다. 실험은 염지과정에서 천일염만 사용하여 만든 75개의 A시험구와 질산염과 아질산염으로 만든 염지제와 천일염을 같이 사용하여 만든 75개의 B시험구를 4단계의 생햄 제조 공정에 맞추어 제조하였다. 4단계의 제조공정은 염지, 염지숙성, 건조 그리고 숙성의 단계로 나뉘며, 각 단계는 기간별로 온도와 습도를 세분화 하였고, 각 단계가 끝날 때마다 생햄 품질에 대한 조사를 실시하였다. 각 단계별 조사결과는 다음과 같다. 무게 변화는 각 단계마다 감량 되었으며, 최종 숙성단계에서는 외국 생햄과 비슷한 약 35%의 감량이 나타났다. 건조 단계 이전에는 pH가 유의적인 변화를 나타냈다. 하지만 건조단계에서는 두 시험구 모두 급격한 상승을 보이다가 다시 감소하였으며, 지방 산화도와 휘발성 염기태질소는 두 시험구 모두 단계가 진행될수록 증가되었다. The purpose of this study is to develop Korean version of raw ham appropriate for Korean conditions by comparing and investigating production processes of Spain and Italy. For the experiment, the authors in this study produced 75 hams for Group A in which only bay salt was used in curing and another 75 hams for Group B in which curing material of nitrate and nitrite and bay salt were used in curing, based on the four-step process of producing raw ham. The four-step process consisted of curing, curing maturation, drying, and maturation; temperature and humidity were differentiated for each step and inspection of the quality of the raw ham was conducted after each step. The results of each step are as follows. The weighs of the hams were reduced at each step, and around 35% of reduction in weight was observed in the final maturation step, a percentage that is similar to that of foreign raw ham. Before the drying step, pH showed significant changes, but in the drying step, both groups showed rapid increase and then decrease. Lipid oxidation and volatile basic nitrogen increased in both groups as the process went along. The nitrite in the Group B showed rapid decrease during the process, maintaining significant decline thereafter. Group A without curing materials was detected of a small dose of nitrate maybe because a trace of nitrate in the bay salt was reduced to be nitrite within the raw ham. As for salinity, the salinity inside and outside of the hams became similar as the process went along, and the salinity at the final step was around 4.5% in both groups. The carcass color was similar in both groups, and the water activity was reduced in both groups as the process went along. In the sensory evaluation, Group A was superior to Group B in all the items. The cell count and the lactic acid bacteria showed increase in the step of curing maturation and then decrease as the process went along. Both groups did not have pathogenic microorganisms. Addition of nitrate and nitrite did not have sufficient influence on the quality of the hams during the each of the steps of the process for producing Korean raw hams in this study between the group added of nitrate and nitrite and the group without them. However, unlike prevention of microbial contamination through the Achilles tendon that was cut for suspension of dressed carcass during butchery and raw hams consumed in foreign countries, Korean raw hams are sold as sliced ham. Thus, in order to secure safety during production process and preservability by packaging, it may be suggested to use nitrate and nitrite. When ram ham is distributed as sliced ham or in small portion packaging for consumers’ convenience, use of nitrate and nitrite during curing may be actively considered in order to prevent possibility in deterioration by oxidation of fat that may occur via contact with oxygen and in microbial contamination during slicing.
