벼 재배 농업인들에게 기술지원을 하고, 소비자들에게 우리 쌀의 안전성을 널리 알리고자,“탑라이스 생산단지” 및 인근 관행재배 지역에서 토양 및 쌀 시료를 채취하여 중금속을 분석한 결과 다음과 같았다. 탑라이스 생산단지 및 인근 관행재배 논토양 중 비소(As) 함량은 1.33 mg/kg으로 토양환경보전법상 우려기준(4 mg/kg)과 대책기준(10 mg/kg)의 1/5~1/11 이하로 매우 낮은 수준이었다. 백미 중 비소(As) 함량은 중국의 잔류허용기준 0.15mg/kg의 1/4 이하로 매우 안전하였다. 논토양 중 카드뮴(Cd) 함량은 0.06 mg/kg으로 우려기준(1.5 mg/kg)과 대책기준(4 mg/kg)의 1/25~1/67 이하로 매우 낮은 수준이었다. 백미 중 카드뮴(Cd) 함량은 우리나라 잔류허용기준 0.2 mg/kg의 1/5 이하로 매우 안전하였다. 논토양 중 구리(Cu) 함량은 4.57 mg/kg으로 우려기준(50 mg/kg)과 대책기준(125 mg/kg)의 1/11~1/27 이하로 매우 낮은 수준이었다. 백미 중 구리(Cd) 함량은 우리나라 먹는물 기준 1 mg/kg의 1/4 이하로 매우 안전하였다. 논토양 중 납(Pb) 함량은 4.68 mg/kg으로 우려기준(100 mg/kg)과 대책기준(300 mg/kg)의 1/21~1/64 이하로 매우 낮은 수준이었다. 백미 중 납(Pb) 함량은 우리나라 잔류허용기준 0.2 mg/kg의 1/9 이하로 매우 안전하였다. 논토양 중 수은(Hg) 함량은 0.03 mg/kg으로 우려기준(4 mg/kg)과 대책기준(10 mg/kg)의 1/131~1/328 이하로 매우 낮은 수준이었다. 백미 중 수은(Hg) 함량은 평균 0.0022 mg/kg으로 나타났고, 중국 0.02 mg/kg 및 대만 0.05 mg/kg의 1/9~1/23 이하로 매우 적었다. 비오염 지역인 ’06년 “탑라이스(Top-rice)” 생산단지 논 토양에서 채취한 토양, 볏짚, 정조, 왕겨, 현미, 쌀겨 및 백미를 분석한 결과 다음과 같다. 논토양 중 비소 1.235 mg/kg, 카드뮴 0.094 mg/kg, 구리 4.412 mg/kg, 납 4.728 mg/kg 및 수은 0.0279 mg/kg으로 우리나라 토양환경보전법상 중금속 오염 우려 및 대책기준을 초과하는 지역은 없었다. 백미 중 비소 0.051 mg/kg, 카드뮴 0.040 mg/kg, 구리 0.345 mg/kg, 납 0.065 mg/kg 및 수은 0.0015 mg/kg으로 잔류허용기준을 초과하는 시료는 없었다. 벼에 흡수?이행된 중금속은 대부분 볏짚에 높게 분포하였고 그 다음으로 쌀겨 부위가 약간 높게 분포 하였다. 그 밖에 정조, 왕겨, 현미 및 백미 중에는 비슷한 농도로 낮게 분포하는 것을 알 수 있었다. 토양 중 중금속과 백미 중 중금속간 흡수기울기는 카드뮴(Cd 0.431) > 구리(Cu 0.054) ≒ 수은(Hg 0.052) > 비소(As 0.021) >> 납(Pb 0.008) 순으로 토양 중 카드뮴이 벼에 흡수되어 쌀로 쉽게 이행되어 축적될 가능성이 제일 컸다. 벼에 흡수된 구리와 수은도 흡수이행이 용이하였고, 비소와 납은 거의 쌀로 이행되지 않았다. 벼의 지상부로 흡수?이행된 중금속 중 63.1~93.4%는 볏짚에 존재하였으며, 정조에 6.6~36.9%, 왕겨에 0.6~5.7%, 현미에 3.2~31.1%, 쌀겨에 2.1~7.6% 그리고 백미에 1.7~22.9%가 분포하는 것으로 나타났다. 카드뮴의 경우 지상부로 흡수된 양의 22.9~33.1%가 백미 또는 현미에 분포하였다. 탑라이스의 중금속 함량과 2005년 국민건강영양조사 제3기 결과보고서의 일일 식품 섭취량 자료를 토대로 우리나라 국민의 중금속 섭취량을 주간잠정섭취허용량(PTWI, provisonal tolerance weekly intake)와 비교하여 안전성을 평가한 결과, 탑라이스(백미) 섭취를 통한 우리나라 국민의 중금속 주간 섭취량은 체중 kg당 As 0.892㎍, Cd 1.035㎍/ Cu 6.712 ㎍, Pb 1.161 ㎍, 그리고 Hg 0.054㎍으로 이는 각각 중금속의 주간잠정섭취허용량(PTWI)의 약 As 5.9%, Cd 14.79%, Cu 0.19%, Pb 4.65% 및 Hg 1.07%에 불과하였다. 한편, 현미를 통한 중금속 섭취량은 각 중금속들의 주간잠정섭취허용량(PTWI) 대비 1% 이내로 안전하였다. 결론적으로 “탑라이스” 생산단지를 포함한 인근의 관행재배지역 토양은 중금속에 오염되지 않았으며, 여기에서 생산된 우리 쌀은 매우 안전하였다. 다소비 농산물 중 무, 배추 등 9종(옥수수, 대두, 팥, 배추, 무, 시금치, 파, 고구마, 감자)을 선정하고 작물별로 10곳의 주산단지에서 농산물과 재배지 토양을 각각 채취하여 중금속의 함량을 분석한 결과, 식품위생법상의 잔류허용기준 및 토양환경보전법 상의 우려기준 및 대책기준을 초과한 경우가 없었다. 또한 작물별로 중금속 흡수력을 개략적으로 살펴보면 흡수력 大(옥수수, 감자, 배추) > 흡수력 中(시금치, 고구마, 쪽파) > 흡수력 少(무, 팥, 대두) 순이었다. 다소비 농산물을 섭취함에 따라 노출되는 중금속이 안전한지 여부를 판단하기 위해, 다소비 농산물의 중금속 함량 자료와 2005년 국민건강영양조사 제3기 결과보고서의 일일 식품섭취량 자료를 토대로 우리나라 국민의 중금속 섭취량을 주간잠정섭취허용량(PTWI)와 비교하여 안전성을 평가한 결과는 다소비 농산물 섭취에 따른 중금속 노출량은 주간잠정섭취허용량(PTWI) 대비 As 17% 이하, Pb 15% 이하, Cd 5% 이하, Cu 0.12% 이하 및 Hg 2.43% 이하로 안전한 수준이었다. Soil and rice grain samples were taken from 33 "Top-rice" areas and neighboring paddies, and analyzed for the elements using ICP-OES and ICP-TOF-MS after acid digestion. A contents of arsenic in paddy soil was 1.33 mg/kg which was below 1/5~1/11 fold of the threshold levels (concern: 4 mg/kg, action: 10 mg/kg), and paddy soil was 0.06 mg/kg of Cd (cadmium) being below 1/25~1/67 fold of the limits (concern: 1.5 mg/kg, action: 4 mg/kg). A level of Cu (copper) in paddy soil was 4.57 mg/kg which was below 1/11~1/27 fold of the threshold levels (concern: 50 mg/kg, action: 125 mg/kg), and Pb (lead) concentration in paddy soil was found to be a 4.68 mg/kg. In addition, Hg (mercury) concentration in paddy soil was to be a 0.03 mg/kg, which was below 1/131~1/328 fold of the threshold levels (concern: 4 mg/kg, action: 10 mg/kg). There were no cultivation areas exceeded of the threshold for soil contamination designated by "The Soil Environment Conservation Law" in Korea. For the polished rice, there were no samples exceeded of a permissible level of heavy metal residues such as 0.051 mg/kg of As, 0.040 mg/kg of Cd, 0.345 mg/kg of Cu, 0.065 mg/kg of Pb and 0.0015 mg/kg of Hg. For the uptake and translocation of heavy metals to rice plant, a main part of heavy metal accumulation was rice straw, and then rice bran. Furthermore, it shown that accumulation of heavy metals in unhulled rice, rice hulls, brown rice, and polished rice was approximately similar as low. The trendline leanings of translocation of heavy metals from soil to polished rice were following order as Cd, 0.4321 > Cu, 0.054 ≒ Hg, 0.052 > As, 0.021 > Pb, 0.008. It was observed that potential ability of Cd uptake in rice plant and then its translocation into polished rice was very high. Contents of copper and mercury absorbed in the rice plant were moderate for translocating into the polished rice, while the arsenic and lead in the plant were scarcely translocated into the polished rice. The distribution of heavy metals absorbed and translocated into aboveground parts of rice plant was appeared that there were remained at 63.3~93.4% in rice straw, 6.6~36.9% in unhulled rice, 0.6~5.7% in rice hulls, 3.2~31.3% in brown rice, 0.8~4.6% in rice bran and 1.1~26.7% in polished rice. The accumulation ratio of Cd in the aboveground parts of rice plant was remained at 26.7~31.3% in brown and polished rice. The average contents of As, Cd, Cu, Pb and Hg in the polished rice samples were 0.037, 0.043, 0.280, 0.048 and 0.002 mg/kg, respectively. These levels are lower than those of other countries in rice grains. Assuming the rice consumption of 205.7g/day by total dietary supplements in Korea, the amount of total weekly metal intake of As, Cd, Cu, Pb and Hg by polished rice were estimated to be 0.0892, 1.035, 6.712, 1.161 and 0.054 ㎍/kg body weigh/week, respectively. The PTWI(%) of As, Cd, Cu, Pb and Hg were 5.95 (inorganic arsenic), 0.26 (total arsenic), 14.79, 0.19, 4.65 and 1.07% estimated to be 0.0892, 1.035, 6.712, 1.161 and 0.054 ㎍/kg body weigh/week, respectively. The soil and selected crop samples as corn, soybean, red bean, cabbage, radish, spinach, spring onion, sweet potato and potato were collected from 10 main cultivation areas. Heavy metals with collected samples were analyzed. There were no exceeded the countermeasure and concern levels in the soil environment conservation law and allowance level of heavy metal residuals in food safety law. It was observed that the order of uptake of heavy metals from soil to upper parts of crops were corn, potato and cabbage > spinach, sweet potato and spring onion > radish, red bean and soybean. In order to decide whether safety to heavy metals in the selected crops or not, comparisons of provisional tolerance weekly intake(PTWI) were reported as lower 17% of As, 15% of Pb, 5% of Cd, 0.12% of Cu and 2.43% of Hg than those of PTWI. Therefore, there were comparatively safety on the selected crops over the nation. In conclusion, it was appeared that the heavy metals contamination in the brown and polished rice, and the selected crops should be safety in Korea.
