ABSTRACT This study set out to investigate the effects of cooking activities with picture books on young children's dietary habits and picky eating and also behavioral changes of their dietary habits and picky eating in the process. The study further aimed to propose a direction for cooking activities with picture books in the field of education for young children and help to increase their educational effects. For those purposes, the study set the following research questions: 1. What kind of effect do cooking activities with picture books have on young children's dietary habits? 1-1. What kind of effect do cooking activities with picture books have on young children's perceptions of hygiene? 1-2. What kind of effect do cooking activities with picture books have on young children's table manners? 1-3. What kind of effect do cooking activities with picture books have on young children's eating attitudes? 2. What kind of effect do cooking activities with picture books have on young children's picky eating? 3. What behavioral changes happen to young children's dietary habits and picky eating in the developmental process of cooking activities with picture books? The subjects include 40 five-year-olds at P and N Childcare Centers in Gyeonggi Province. Twenty of them from P Childcare Center made the experiment group, and the other twenty from N Childcare Center made the control group. The research tool employed in the study consulted the questionnaire of Kim Eun-hee(2004) to measure young children's dietary habits. The questionnaire items covered three areas, namely "demographic characteristics," "current operational state of meal service at kindergarten," and "guidance for dietary habits." The ones on "guidance for dietary habits" were partially revised and supplemented to fit the research objectives. The tool to measure picky eating was based on the Food Bicycle according to the nutrition intakes criteria announced by Korean Nutrition Institute(2010) to choose, revise and supplement the food groups. The childcare center menus provided by the child rearing information center were used to further segment and reorganize the food groups. Total eight sessions of cooking activities with picture books were given to the experiment group over eight weeks from August 5 to September 27, 2013 with large group-based picture book appreciation on the first day of each week and small group-based cooking activities on the second day of each week. The pre- and post-test scores were treated to obtain mean and standard deviation and t-tested for analysis with the SPSS 16.0 program to see whether there were differences in dietary habits and picky eating between the experiment and control group. Field observation was made for total eight hours over eight sessions during the lunch time on every Friday during the experiment period and follow-up period except for holidays to examine behavioral changes to young children's dietary habits and picky eating due to cooking activities with picture books. Observation was accompanied by recording on the field log. Meaningful interactions related to the research and proper examples were used to re-review the content and interpretations during data analysis. The research findings were summarized as follows: First, the five-year-olds of the experiment group scored significantly higher total points in dietary habits than those of the control group after cooking activities with picture books. The experiment group scored higher points across the subareas of dietary habits, namely perceptions of hygiene, table manners, and eating attitudes, than the control group. Those findings indicate that cooking activities with picture books had positive effects on young children's dietary habits. Second, the five-year-olds of the experiment group scored significantly higher total points in picky eating than those of the control group after cooking activities with picture books. Even though the experiment group did not score significantly higher points in such subfactors of picky eating as fish and shellfish and fat and oil than the control group, its scores were higher in meat, eggs and beans, milk and dairy products, fish to be consumed whole, seaweeds, vegetables, fruits, grains and potatoes, and Kimchi than the scores of the control group. That is, cooking activities with picture books seem to have positive impacts on the improvement of young children's picky eating. Finally, the study categorized eating attitudes into before-, during- and after-eating attitudes and analyzed behavioral changes to young children's dietary habits and picky eating after experiencing cooking activities with picture books. The changing process around table manners was examined for before-eating attitudes. In the early stage of the experiment, young children did not keep the order and say the words of appreciation. As the experiment progressed, however, they kept the order, said the words of appreciation, and waited till their friends got ready in the right posture. The changing process around attitudes toward food was examined for during-eating attitudes. In the early days of the experiment, young children were picky eaters and displayed inappropriate behaviors regarding food. As the experiment progressed, however, they took interest in food and consumed different foods evenly with a happy mindset. Finally, the changing process around perceptions of hygiene was examined for after-eating attitudes. In the early days of the experiment, young children showed poor behaviors regarding perceptions of hygiene. As the experiment progressed, however, they arranged their own spots and brushed the teeth for themselves before play activities.
