Soluble tannin contents of Cheongdobansi and Daebong decreased from 70.56 to 24.32 mg and 89.94 to 8.14 mg per 100 g dry weight, respectively, after ripening. On the other hand, insoluble tannin contents of those persimmons increased from 1.12 to 12.26 mg and 0.73 to 9.90 mg per 100 g dry weight, respectively. Physiological activities such as antioxidant, anti-adipogenic, antithrombotic and anticoagulant activities of each tannin were evaluated. Antioxidant activity was determined by measuring DPPH radical scavenging activity (RSA), ABTS RSA, and reducing power. The strongest DPPH RSA and reducing power was found in soluble tannin of CU. Soluble tannins of CR, CU, and DU scavenged most of ABTS radicals at concentration of 1000 μg/mL. Approximately 83 and 42% suppression of adipogenesis was observed at 100 μg/mL treatment of soluble tannins of CU and CR, respectively. Soluble tannin showed relatively higher antioxidant and anti-adipogenic activities than insoluble tannin. However, persimmon tannins showed different tendency in antithrombotic activity. Insoluble tannin showed higher fibrinolytic and anticoagulant activities than soluble tannin, especially insoluble tannin of CU showed the highest fibrinolytic activity. These results demonstrate that soluble and insoluble tannin extracted from persimmons can be considered as sources of natural antioxidant in food industry and as suitable a preventive medicine or medicine in the medical industry.
