본 연구는 참깨를 β-glucosidase 를 생산하는 유산균인 Lactobacillus acidophilus ATCC 4356, Lactobacillus plantarum P8 (LP) , and Streptococcus thermophiles S10 로 발효했을 때 발효 기간 동안의 이화학적, 미생물학적 변화를 보고 세사미놀 배당체의 전환율을 확인해 가장 적합한 균주를 선발하고자 실시하였다. 참깨를 각각의 균주로 37℃에서 24시간 발효 했을 시, 유산균 수는 모든 군에서 유의적으로 증가하였다. (p<0.05). 유산균수의 증가에 다른 젖산의 형성으로 인해 pH는 모두 유의적으로 감소하였다 (p<0.05). 참깨에서의 세사미놀 배당체의 함량은 발효시간이 지남에 따라 모든 군에서 유의적으로 감소하였고, (p<0.05) 비배당체의 함량은 모든 군에서 유의적으로 증가하였다. (p<0.05) Total phenol contents, DPPH radical scavenging activities, Reducing power을 통하여 항산화 효과를 분석한 결과 발효 시간이 길어질수록 항산화 효과가 유의적으로 증가하였다. (p<0.05) 또한, LP로 발효한 참깨에서 가장 높은 항산화 효과가 나타났다. 이러한 결과는 세사미놀 비배당체 함량의 증가가 항산화 효과에 영향을 주었기 때문으로 사료된다. 따라서, LP가 참깨를 발효하기에 적합한 starter culture임이 확인 되었으며, 이는 참깨 발효 제품을 생산하는데 있어 중요한 기초 자료가 될 것으로 기대된다.

This study was carried out to select the most competent bacterial cultures that could convert sesaminol glycosides to aglycone by β-glucosidase produced by lactic acid bacteria such as Lactobacillus acidophilus, Lactobacillus plantarum (LP), and Streptococcus thermophiles in sesame fermented at 37℃ for 24 h. The pH of fermented sesame was decreased compared to non-fermented controls. The pH of LP was lower than that of the other two during fermentation. Fermented sesame had higher antioxidant activity compared to non-fermented controls during the entire fermentation time.
