최근 우리 사회는 세계적으로 경제·사회적 질서체계가 하나로 연결되는 세계화 시대의 추세에 따라 다문화사회로 접어들게 되었다. 이에 따라 다문화가족과 그 자녀의 수도 점차 증가하고 있으며 이들의 교육에 대한 문제도 자연스럽게 표면 위로 떠오르고 있다. 본 연구는 다문화가족 초등학생의 영양·식생활의 문제점을 분석하고 다문화이해교육 기반 영양·식생활교육 프로그램을 개발하여 교육 현장에 시범 적용해봄으로써, 다문화가족 아동의 영양지식 향상 및 식습관과 식이자기효능감을 바람직한 방향으로 변화시키기 위한 교육 프로그램을 개발하고자 실시되었다. 교육 프로그램 개발을 위해 기존의 연구논문 및 교육 프로그램과 교육 자료를 수집·분석하였으며, 다문화가족 아동 384명을 대상으로 식생활 및 영양교육 요구도를 설문조사하였다. 조사된 자료를 바탕으로 교육 주제와 내용을 선정하여 총 3차시의 다문화이해교육 기반 영양·식생활교육 프로그램을 개발하였다. 개발된 프로그램은 대전 지역에 소재한 다문화가족지원센터에서 교육 신청을 받은 다문화가족 초등학생 자녀 5명과 그들의 어머니 4명을 대상으로 2016년 4월 첫째 주부터 3주간 매주 80분씩 시범 적용하고 교육 전 후 설문 조사를 실시하여 교육 효과를 평가하였으며 본 연구의 결과는 다음과 같다. 첫째, 다문화가족 아동들은, 전반적으로 식생활 안전에 대한 점수가 낮았으며, 특히 개인위생 관리가 제대로 이루어지지 않고 있어 교육이 필요하다고 판단되었다. 둘째, 식생활에서의 가장 큰 문제점은 편식이었으며, 많은 연구 결과에서도 주로 채소를 편식한다고 보고하였고 실제 섭취량도 권장 수준에 못 미치는 것으로 보고된 바 있다. 따라서 채소에 대한 두려움과 거부감을 감소시키고 편식 교정과 함께 건강한 간식 섭취 행동 실천을 위한 교육 내용으로 샌드위치 만들기를 교육 활동으로 계획하였다. 셋째, 두 번째로 큰 식생활 문제는 ‘간식을 많이 먹는 것'으로 나타났다. 청소년기에는 성장, 발달과 학업 수행을 위해 많은 에너지와 영양소가 요구되어 간식섭취가 필요하며, 따라서 건강한 식품 선택과 섭취가 중요하다. 그러나 먹을 것을 사먹을 때 생각하는 것으로 영양보다 기호에 더 큰 비중을 두고 식품을 선택하는 경향이 있어 영양표시 확인과 함께 건강하고 올바른 식품을 스스로 선택할 수 있는 능력 함양이 필요하다고 생각되었다. 넷째, ‘명절음식 문화' 교육을 통해 문화 적응과 이해를 돕고, 요리 활동을 통한 자신감, 사회성 향상, 언어습득 등 다방면에서의 교육적 효과를 기대하며 교육 프로그램을 구성하였다. 또한 음식 문화 체험학습의 필요성, 한국음식 교육 요구도에 따라 식생활과 관련된 다문화이해교육을 실시함으로써 다문화가족 아동의 적응을 돕기 위한 프로그램을 계획하였다. 다섯째, 이에 따라 다문화가족 아동을 위한 교육 프로그램의 주제는 식중독 예방, 영양표시 확인하기, 명절 음식문화로 선정하였으며, 문화 적응을 위해 전체 차시에 다문화이해교육 내용 요소를 포함한 내용을 구성하여 교수학습지도안, 교육매체, 활동지 등의 교육 자료를 개발하였다. 여섯째, 교육 진행 후 대부분의 아동과 어머니에게서 식이자기효능감이 향상된 것을 볼 수 있었으며, 영양지식 점수가 증가하였고 아동에게서 식생활 태도·행동이 긍정적으로 변화한 것을 볼 수 있었다. 교육 참여자의 프로그램 평가 결과 교육 내용 기억, 식생활에 도움, 만족도, 영양지식 증가에 도움, 교육 내용의 이해도 등 모든 항목에서 긍정적인 평가 결과가 나타났다. 본 연구를 통해 개발된 다문화이해교육 기반 영양·식생활교육 프로그램을 통해 다문화가족 아동의 식생활 태도와 행동, 영양 지식, 식이자기효능감이 향상되었으며, 따라서 본 연구에서 개발된 교육 프로그램은 다문화가족 초등학생 아동들의 식생활을 긍정적으로 변화시킬 수 있다고 판단된다. 다문화가족 아동의 바람직한 식습관 형성을 위해서는 학교와 가정, 지역사회와 연계하여 체계적이고 지속적인 지도를 할 수 있는 교육 프로그램이 필요하다고 사료된다.

Lately our society has been turning into a multi-cultural one with the trend of globalization that the global economic and social order systems are being unified. Accordingly, the number of the multi-cultural families and their children is increasing gradually, while the issue of their education surfaces naturally. The purpose of this study was to address the problems involving multi-cultural family elementary children's nutritional and dietary life and thereupon, develop a nutritional and dietary life education program based on the education for understanding of the multi-cultural families, and thereby, apply the program to an educational field in an effort to develop an education program conducive to improvement of multi-cultural family children's nutrition knowledge, their dietary life and dietary self-efficacy in a desirable way. For this purpose, preceding studies, education programs and materials were reviewed, and thereupon, 384 multi-cultural family children were sampled to be subject to a questionnaire survey about their needs for the education on dietary life and nutrition. Based on the results of review and survey, subjects and contents of the education program were determined, and thereupon, an education program for their nutritional and dietary life was developed, based on the education for understanding of the multi-cultural families; the program consisted of 3 sessions in total. The education program thus developed was test-applied to 5 multi-cultural family elementary children and their 4 mothers who had applied for an education at the Multi-cultural Family Support Center in Daejeon; the program was test-operated for 3 weeks starting from the 3rd week of April in 2016, and each session was operated for 80 minutes. The subjects were surveyed through a questionnaire before and after the program to evaluate the effects of the program. The results of this study can be summarized as follows; First, the multi-cultural family children scored lower on the safety of dietary life in overall terms, and particularly, they were not well managing their personal hygienics. Such findings suggests that they need to be educated on the safety of dietary life and personal hygienics. Secondly, the most serious problem involving their dietary life was the unbalanced diet. Many preceding studies report that their major foods are vegetables. Moreover, it was found that their actual intake of vegetables fell short of the recommended quantity. Hence, in order to help them relieved of fear or repulsion of the vegetables and help them to practice a healthy snack intake, this study planned a sandwich-making session as an educational activity. Thirdly, the second most serious problem involving their dietary life was 'too much snacks.' The juveniles need to take in snacks to meet their needs for energy and nutrition required for their growth, development and learning. Hence, it is important for them to select and take in healthy foods. However, when they buy the foods, they tend to put priority on tastes than nutrition. Therefore, it was perceived that it would be necessary to help them to check the marks of nutrition and thereby, select correct foods for themselves. Fourth, a 'festival foods culture' session was designed in the education program to help the subject children and their mothers to adapt themselves to the Korean culture with a better understanding of it, while enhancing their confidence, sociability and language skill through cooking activities. On the other hand, the education program incorporated a session of the education for understanding of the multi-cultural families that was designed to help the subject children and their mothers to better understand the multi-cultural education and particularly, help the children to be well adapted to the Korean society. Fifthly, the themes of the education program for the multi-cultural family children were determined as follows: prevention of the food poisoning, checking of the nutritional marks and festival foods culture. In order to help the children well adapted to the Korean culture, the education program was designed to include the contents of the education for understanding of the multi-cultural families, while such educational materials as teaching-learning guide, educational media and newsletters were developed. Sixthly, after the education program, it was found that subject children's and their mothers' dietary self-efficacy was improved significantly, their scores on nutritional knowledge were higher, and that children's dietary attitudes and behaviors changed in a positive way. As a result of analyzing subjects' perception of the education program, it was found that their perception of the program was positive in all items: memory of the program contents, usefulness to their dietary life, satisfaction with the program, improvement of their nutritional knowledge, understanding of the program contents, etc. As discussed above, the education program developed by this study was found to enhance multi-cultural family children's dietary attitudes and behaviors, nutritional knowledge and dietary self-efficacy. Hence, it is judged that the education program would conduce to a positive change of the multi-cultural family elementary children's dietary life. Lastly, in order to help the multi-cultural family children form a desirable dietary habit, it is deemed necessary to develop an education program that can be operated in a systematic way and on a continual basis, combining schools, homes and community.
