The Effects of Cooking activities using lower preference ingredients to Young children's eating habit and unbalanced diet improvement in Kindergarten원문보기

The purpose of this study is to identify how cooking activities using food products of lower preference (less preferred food products) affect children’s eating habits and unbalanced diet. To accomplish the purpose, I suggest the research questions as follows; 1. How does cooking activity using less food products of lower preference affect changes in children’s dietary habits? 2. How does cooking activity using less food products of lower preference affect children’s unbalanced diet?
The research took place in a kindergarten in ‘G’ city of Jeollabuk-do Province, and 15 of experimental group and 13 of control group – total 28 children – were selected among 4-year-old children from a class of 3-,4-year-olds. Also, I referred to the questionnaires that Eunhee Kim (2004) used as a research tool to examine children’s eating habits, and modified and supplemented them in order for them to adapt for the purpose as change in understanding of foods in the context of nutrition. I selected food groups based on dietary reference intakes for Koreans(2010) published by The Korean Dietetic Association and
modified and supplemented the research tool devised by Myungjoo Choi (2002), then restructured it with the information of daily menus and less preferred food items provided by the kindergarten. The cooking activities for the experimental group were performed total 12 times for 9 weeks from October 30th, 2015 to January 29th, 2016 while children of the control group had Nuri course which is a regular course. To confirm homogeneity of variance between the groups, I used t-test before pre-and post-tests. I also calculated the standard deviation to verify the effectiveness of how cooking activities using food products of lower preference affect improvement of children’s eating habits and unbalanced diet. SPSS WIN 18.0 was used in statistical data analysis for this. The result of the study is to be summarized as follows. First, cooking activities using food products of lower preference influenced change of children’s eating habits positively. It also affected ‘knowledge of nutrition’ for the most as well as ‘eating attitude’ which was a subdomain of eating habit while not affecting ‘table manners.’ Second, cooking activities using food products of lower preference influenced children’s unbalanced diet positively. In detail, it had an effect on subgroups of ‘seafood, vegetables, fruits, starchy food and Kimchi’ while not on ‘meats, pulses, dairies and seaweeds.’
