Pre-thermal treatment is important for minimizing the quality change of food products during main cooking or storage. Freezing is one of the effective processes for extending the shelf life of foods. Before freezing, a thermal treatment is usually needed to control the food quality. In this study, the conditions of pre-thermal treatment for freezing were investigated so that these conditions can be optimized for improving the quality of the foods subjected to frozen storage. Washed and sliced samples of carrots, shiitake mushrooms, and spinach were thermally treated by immersing in boiling water (100℃, carrot and mushroom: 60-600 s, spinach: 30-300 s), steam (100℃, carrot and mushroom: 60-600 s, spinach: 30-300 s), and by pan-frying with oil (180℃, carrot: 10-80 s, mushroom: 30-270 s, and spinach: 15-90 s). The tissue samples were maintained until 2 min after immersing in boiling water or steam but they were damaged in just 30 s of pan-frying with oil. The color and hardness of the food samples were significantly changed by treatment time and temperature. The hardness of the carrot sample was decreased to 43% compared to fresh carrot (4,500 g•f) after 1 min, 3 min, and 20 s by boiling water, steam, and pan-frying treatment, respectively. Regarding the carrot nutrition, the levels of ascorbic acid, organic acid, and peroxide activity were decreased compared to fresh carrot in all treatments; especially, succinic acid content was dramatically decreased by boiling-water treatment. However, the free sugar contents in all the samples increased with the increase in the treatment time. Mushrooms treated with boiling water or pan-frying tended to show decreasing hardness within 1 min. In case of steam-treated mushroom, the hardness values were maintained for 1 min. The organic acid contents of steam-treated samples were the lowest among all treatments. Steam-treated samples for 3 min showed the lowest microbial count. The hardness of spinach decreased with blanching time; in particular, hot water treatment resulted in rapid decrease in the shear force of spinach. For proximate compositions, the highest moisture content in the samples was found after boiling-water treatment, while crude protein and ash were the highest after steam treatment. The usage of oil in pan frying treatment resulted in the highest lipid content in the samples. Thermally treated spinach had a low total microbial plate count. In addition, thermophilic bacteria, coliforms, molds, and yeast were not detected in all the thermal treatments. Peroxidase activity was lowered by applied thermal treatments. After the thermal treatments, the carrot, mushroom, and spinach samples were treated by individual quick freezing (IQF) process or liquid nitrogen freezing(LNF) process, and then continuously put into vacuum packaging or air-containing packaging. The packaged samples were stored at −12, −18 and −24°C for 48 weeks. The carrot, mushroom, and spinach samples frozen by IQF were thawed with 400W microwaves, after which their physicochemical properties such as texture, color value, microorganism levels, and nutrition contents were determined. The hardness and total color of the frozen samples were significantly different from that after thermal treatment(P<0.05). The ascorbic acid content of the carrots decreased sharply with the increase in the storage period, especially, the storage sample in high temperature was decreased more than sample to lower storage temperature.
