This study was performed to examine the quality characteristics and antioxidant activity of the yogurt with different contents (0.5-2% (w/w)) of Lemon Grass Hot-Water Extracts(LGHWE). Yogurt was fermented with two kinds of lactic acid bacteria(Lactobacillus bulgaricus, Streptococcus thermophilus) at 37℃ for 24h. The pH decreased with higher LGHWE content until 8 h, whereas the treated groups showed higher pH levels than the control group after 12 h. The amount of lactic acid bacteria and the viscosity increased with fermentation time. But, the amount of lactic acid bacteria decreased significantly with higher LGHWE content at 24h and the viscosity was highest in yogurt with 0.5% LGHWE at 24h. Color values of LGHWE yogurt were lower in terms of brightness, whereas redness and yellowness values were higher compared to the control. The titratable acidity, soluble content, the DPPH and ABTS radical scavenging activity, reduction power by FRAP, total phenol assay, total flavonoid assay of yogurt significantly increased with higher LGHWE content. Consumer acceptability score of yogurt with 0.5% LGHWE was ranked higher than other yogurts in terms of flavor, texture, mouthfeel and overall preference, whereas the yogurt with 2% LGHWE showed lower sensory attributes than those of other yogurts. As a result of storing the fermented yogurt at 4℃ for 21 days, the yogurt added with 0.5% LGHWE showed no differences in pH and titratable acidity compared to control after storage at 4℃ for 14 days, and the viscosity and the amount of lactic acid bacteria of the yogurt with 0.5% LGHWE were higher than the control during 14 days storage. Also, the control and treated yogurt groups showed high pH levels, and low levels of the titratable acidity, viscosity and the amount of lactic acid bacteria during storage from 14 days to 21 days. The storage abilities of yogurt added with 0.5% LGHWE is were relatively good at 4℃ for 21 days. These results suggest that the addition of LGHWE has beneficial effect on the quality, storage and functionality of yogurt, and that the addition of 0.5% LGHWE is the most suitable for manufacturing yogurt.
