The texture of food is one of the important factors influencing the quality and consumer preference of elderly friendly foods. However, the standards and guidelines of food texture for the elderly diets are still lacking. Furthermore, there is a need to objectively analyze food texture in an environment similar to human mastication activity. In this study, the texture measurement methods of softened food materials for the elderly diets were evaluated and an oral processing simulator was also developed to monitor the textural changes of foods during the imitated chewing process. In the first chapter, compression- and shear-based measurements were applied to identify the texture differences between softened and non-softened samples (five ingredients (beef, chicken, bracken, radish green, burdock) and frozen rice meals) Texture profile analysis and Kramer shear cell test were used as compressive and shear force-based methods, respectively. The hardness range was 154.99-331.50 N for non-softened ingredients and 104.58-274.55 N for softened ingredients. Frozen rice meals showed also a similar tendency to their ingredients. Furthermore, the correlation between the measured mechanical texture and sensory evaluation results (hardness, chewiness, and toughness) exhibited that the hardness values measured with Kramer shear cell was positively correlated to sensory hardness and toughness. In the second chapter, a new oral processing simulator with artificial saliva was developed and applied to evaluate the masticatory properties of cereal-based foods. Especially, the oral processing simulator was designed to be operated with a texture analyzer by homogeneously spraying artificial saliva at 4.5 g / min through an ultrasonic oscillator. Under the operating conditions of 100 mm/min crosshead speed, 60% strain, and 20 successive compressions, the gels prepared with three rice flours (Milyang, Hanareum, Backjinju) containing different amylose contents were applied to the oral processing simulator. As a result, the difference in degradation rate of gel was observed clearly in the oral processing system depending on amylose contents. Therefore, this study is expected to contribute to determining objective textural and rheological guidelines for the elderly foods by monitoring the textural and rheological change of foods in a simulated chewing environment.
