Especially, an interest in nature waxes is recently on the rise since they are approved as food additives. However, the processing performance of natural waxes in a food system has not been extensively reported due to the lack of their fundamental studies. In this study, natural waxes were used as vegetable oil structurants to produce oleogels whose rheological, thermal, and oxidative properties were characterized. In addition, the wax-based oleogels were utilized as alternatives to solid fat (shortening and palm oil) in muffins and instant fried noodles, respectively, and their processing performances were evaluated. In the first chapter, natural waxes (candelilla wax, carnauba wax, and beeswax) were utilized as canola oil structurants to produce oleogels. The physicochemical properties of the oleogels were evaluated from textural, thermo-rheological, and oxidative points of view. The oleogels with candelilla wax exhibited the highest hardness, followed by carnauba and beeswax oleogels while the most adhesive and cohesive properties were observed in the beeswax oleogel. The flow behaviors of the oleogels over temperature exhibited greater sensitivity of carnauba wax oleogels to temperature. The storage moduli of the oleogels were more temperature-dependent, causing the crossover of the storage and loss moduli during the temperature change. Highly linear correlations (R2 > 0.96) were observed in the log plots of solid fat content and rheological property. In addition, the candelilla wax oleogels had the highest peroxide value, followed by the carnauba and beeswax oleogels, demonstrating that oleogels with a harder texture exhibited greater resistance to oxidation during storage. In the second chapter, grape seed oil-candelilla wax oleogels were prepared and evaluated as a replacer for shortening in muffins. Muffin batters with greater amounts of oleogels exhibited lower viscosity, greater shear-thinning behavior, and less elastic nature. The shortening replacement with oleogels significantly increased the specific gravity of the batters, consequently affecting the muffin volume after baking. X-ray tomography demonstrated that lower fragmentation index (that is, a more connected solid structure) was observed in the oleogel-incorporated muffins that were correlated to more enclosed and isolated air cells. The stress relaxation test showed that the shortening replacement with oleogels produced the muffins with firmer and springier texture. Based on the fatty acid compositions, the ratios of saturated to unsaturated fatty acids were significantly reduced from 2.81 to 0.41. In the third chapter, soybean oil was structured with carnauba wax to develop solid-like oleogels that were evaluated in instant fried noodles a deep-fat frying medium containing high saturated fat. A more rapid change in viscosity with temperature was observed in the oleogels with increasing levels of carnauba wax. Upon heating, the storage (G’) and loss (G”) moduli of oleogels and palm oil decreased with a greater temperature dependence of G’, showing the crossover of G’ and G”. Compared to the palm and soybean oil-fried noodles, the samples fried in the oleogels absorbed approximately 16% less oil which could be correlated with their scanning electron microscopic images. However, there were no negative effects on the noodle texture. The levels of saturated fatty acids in the oleogel-fried noodles were significantly reduced (19 g/100 g), compared to the palm oil-fried noodles (54 g/100 g).
