Kimchi is a Korean traditional fermented food made by pickling salted cabbage or radish in a sauce of red pepper powder, salted seafood (Jeotgal), green onion, garlic, and other ingredients. Various fermented microorganisms derived from various vegetables, Jeotgal and seasonings determine the taste and flavor of kimchi. The ingredients of Kimchi exhibit a wide variety of characteristics depending on the personal taste and local characteristics. Especially, Radish Kimchi(Seokbakji) is a Jeotgal kimchi which mainly uses salted radish and fermented seafood. Jeotgal is one of the three major fermented foods in Korea, along with the fermented pickling vegetable and the paste. It is one of the major sources of microorganisms in kimchi. In this study, a moderate halophile strain was isolated from radish kimchi containing a large amount of jeotgal. A colony that grown on TSA medium containing 10% NaCl were isolated. The isolated strain was genetically identified by 16S rRNA sequencing and named Oceanobacillus iheyensis KMU78. This strain does not grow differently from the O. iheyensisT when the NaCl concentration is low. The O. iheyensis KMU78 strain is a new typical halophilic bacterium, while O. iheyensisT is a halotolerant bacterium. Although both strains were identified with the same species, these conflicting results show that they are completely different.
