The annual occurrence is 149.057 tons, which is increasing every year, but it has difficulties of utilizing because they have limited processing patterns, such as gelation, browning, wound, and bitter taste. To solve this problem, this paper will find functionalities and processing improvements by using tannins, the main ingredient of green persimmons, and seek to promote high-value of green persimmons, industrial revitalization and regional development. Effectiveness and machining processing properties were evaluated by treating High pressure homogenizer, Auto-claved, cold plasma and sub critical processing. The results showed excellent anti-inflammatory, skin cell regeneration and wrinkle improvement in samples treated with sub critical process at pH 7, 160 °C, and excellent machining without alkali treatment were shown to enhance the value as a functional material.

The antioxidant activities of the GP extracts were measured by ABTS and DPPH radical scavenging ability.
