식생활에 대한 변화와 관심도의 상승에 따른 소비 형태의 변화는 요즈음의 마케팅 트렌드로 볼 수 있다. 본 연구에서는 이러한 고객들의 식생활 변화가 항공사 선택 속성 중 하나인 기내식 품질에 영향을 미치는가에 대한 연구를 하고자 하였다. 이는 기내식품질이 항공사 만족 및 재이용을 하는데 있어서, 식생활 관여도에 따라 어떤 유의미한 차이를 보이는지를 연구하여, 소비자들의 식생활 변화의 흐름에 맞는 기내식 품질 개발을 통해 항공사 마케팅 방안에 도움이 되고자 한다.
이 연구를 위해 기내식이 제공되는 국제선 이용 고객 300명을 대상으로 표본조사를 실시한 결과, 기내식 품질은 음식과 서비스 2가지 하위 차원으로 나뉘었으며, 각각의 요인이 고객만족 및 재이용의도에 유의한 영향이 있는 것을 확인 할 수 있었다. 한편, 항공사 기내식 품질이 식생활 관여도에 따라 유의한 차이가 있는지를 분석 한 결과, 기내식 품질 요인 중 음식은 식생활 관여도에 유의한 영향이 있는 것으로 확인되었으나, 서비스는 식생활 관여도에 유의한 차이가 없는 것으로 나타났다. 이는, 고객들의 식생활에 대한 관심이 높아짐에 따라, 기내식 품질에 있어 서비스 측면보다, 음식에 대한 관심과 만족도가 중요해짐을 확인 할 수 있었다.

In an era of cutthroat competition among airliners, intensified by fierce fare cutting to compete with aggressive low-fare carriers, a number of airliners have tried to invest in huge amount of resources to earn passengers' recognition by extending their route networks, hiring local flight attendants, or adopting advanced aircrafts. Then, this approach seems to have only limited impact on repositioning themselves in the industry and changing their brand image in the market because of the difficulties in immediate transformation and the burden of cost incurred. However, the increase of in-flight meal quality, among other passenger services provided by airliners, is the area where they can create new dimensions of customer satisfaction with the most cost effective way and various applicable options.
While considerable research attention has been directed toward the effects of in-flight meal quality on customer satisfaction, there is limited research investigating the effect of a passenger’s food involvement as a moderating variable to the interaction between the quality and the satisfaction. The aim of this study is to assess the impact of changing trends in dietary pattern on in-flight meal quality as an service quality attribute. In the present study, I seek to determine how meaningfully in-flight meal’s impact on customer retention makes differences and attempt to shed some light on establishing airliners' new marketing strategy in terms of developing in-flight meal options more suitable to changing trends in dietary pattern.
300 participants in this study were randomly selected among international passengers who has been provided with in-flight meals and were firstly asked to indicate the correlation between in-flight meal quality, which was divided into two sub categories as food and service, and their satisfaction level and reuse intention. Significant correlations were obtained between them in both sub categories. On the other hand, when it comes to the correlation between a passenger’s food involvement and in-flight meal quality, the results yielded some interesting findings. While the correlation between the food, as an attribute of in-flight meal quality, and a passenger’s food involvement was positive and significant, no significant correlation was obtained between the service and a passenger’s food involvement. This results suggest that when it comes to in-flight meal quality, concerns on food and satisfaction with the food itself are becoming far more important than the in-flight meal service as customers' dietary patterns change.
The result of this study founds evidence that substantial research and development on food itself are prerequisite for increasing customer satisfaction level through in-flight meal quality, rather than the in-flight meal service improvement. At the same time, it further suggests that the development of new menu options for in-flight meal along with the change of in-flight meal quality is essential to secure customer retention efficiently.
