This study analyzed the physicochemical and sensory characteristics of Cold-Brew coffee by different storage containers and storage periods. The purpose of this study was to provide the basis for choosing appropriate containers when storing Cold-Brew coffee at cafés and at home. Cold-Brew coffee was extracted from water of room temperature in a room tempera-ture setting and was stored at low temperature (5°C). As storage containers, four differ-ent containers were used; (1) transparent glass (GT), (2) brown glass (GB), (3) PET(polyethylene terephthalate, PE) and (4) Tritan plastic(polycyclohexane-1,4-dimethyleneterephthalate, PL). Storage periods varied from 0 to 3, 7, 14, 21 days. Changes in physiochemical characteristics were examined with all of the samples from different storage containers and storage periods. To investigate the changes in sensory characteristics, a preference investigation was conducted using the samples from day 3 and day 21. There was a significant difference in pH by the storage period. pH tended to decrease as the storage period got longer and showed the biggest decrease on day 21. However, there was no significant difference in pH between storage containers. Titratable acidity showed a tendency to increase as the samples were stored for a longer time. No signifi-cant difference was found between storage containers. As for the hunter color value, although lightness (*L) increased with storage period, the difference was not signifi-cant. There was also no significant difference between storage containers. Redness (*a) declined with storage period, the measured value decreasing in the order of GT>GB>PE>PL. A significant difference was found between different containers on day 14 and day 21. As the storage period got longer, yellowness(*b) tended to decrease in the order of GB>GT>PE>PL. No significant difference was found between contain-ers. Every sample declined in brownness on day 3. But the samples increased in brownness from day 7, resulting in no significant difference between samples from day 0 and day 21. Although there was a significant difference between containers, the measured values were similar. Regarding solid content(°Brix), a significant difference was found depending on storage period, with samples stored in GT, GB, PE, PL de-creasing in solid content until day 7 and increasing thereafter. A significant difference was found in samples from day 21, depending on where they were stored. Total poly-phenol content decreased as the storage period got longer and there was a significant difference between containers. Although all the samples decreased in total polyphenol content, the sample from day 21 that was stored in GB showed the biggest drop. The value of DPPH free radical scavenging increased at day 21. Despite the significant dif-ference between storage containers in DPPH free radical scavenging, the decreasing trend was the same across different containers. Concerning the caffeine content, it de-clined in general by storage period and no significant difference was found between containers. Chlorogenic acid was not significantly different between samples from dif-ferent storage periods. As for sensory examination, there was no significant difference in color or aroma. Regarding taste, although sour taste and sweet taste were not signifi-cantly different, a significant difference was found in bitter taste, with PE03 showing the highest value and GB21 showing the lowest value. As not much significant differences were found between different types of storage containers, I expect there would be greater choices when choosing a storage container at cafés or at home.
