건강 프리미엄 고령친화 HMR제품 개발을 위한 시장세분화 전략에 관한 연구
본 연구는 시니어를 대상으로 건강 프리미엄 고령친화 HMR 제품의 인식도 및 요구도를 파악하고 고령친화 HMR 제품의 선택행동에 있어서 계획행동이론을 적용하여 영향관계를 분석하고자 하였다. 또한 건강 증진 라이프스타일에 따라 시장을 세분화하고 이에 따른 시장 세분화 전략을 제시하기 위한 연구를 수행하였다. 본 연구를 통하여 건강프리미엄 고령친화 HMR 제품 개발을 위한 기초자료를 제공하고 효과적인 마케팅 전략을 제시하고자 한다. 연구의 대상자는 HMR 제품을 이용해 본 경험이 있는 55세 이상 시니어 소비자 436명으로, 수집된 자료는 SPSS statistics(ver.18.0, spss Inc, Chicago, IL, USA)를 이용하여 분석하였다. 연구의 결과는 다음과 같다.
첫째, 건강 프리미엄 고령친화 HMR 제품 개발 요구도 분석 결과, ‘치료식 제품’(4.08점), ‘소화가 편한 제품’(4.00점), ‘저염 제품’(3.95점)의 순으로 요구도가 높게 나타났다. 건강 프리미엄 고령친화 HMR 제품 구매 시 추가 지불의사를 분석한 결과, 전체 14개 항목 중 ‘치료식 제품’(19.4%), ‘친환경 식재료 제품’(18.3%), ‘소화가 편한 제품’(16.9%)의 순으로 추가 지불의사가 높게 조사되었다. 둘째, HMR 제품 선택속성에 대한 중요도와 만족도를 분석한 결과, 중요도의 순위는 ‘신선도’(4.47), ‘위생’(4.47), ‘포장용기의 청결’(4.35) 순으로 조사되었다. 만족도의 순위는 ‘위생’(3.61), ‘신선도’(3.53), ‘포장용기의 청결’(3.51) 등으로 조사되었다. HMR 제품 선택 시 중요도와 만족도의 점수 차이가 많이 난 항목은 ‘신선도’(0.94), ‘위생’(0.87), ‘건강기능성’(0.78) 등으로 나타났다(p<0.001). 셋째, 전체 조사대상자의 HMR 제품 선택속성에 대한 ISA 분석 결과 중요하게 생각하나 상대적으로 만족도가 낮은 2사분면에 속한 항목을 살펴보면 ‘영양’, ‘친환경’, ‘계절 식재료 활용’으로 나타났다. 남성 시니어의 ISA 분석 결과에서 2사분면에 속한 항목은 없었다. 여성 시니어의 ISA 분석 결과 2사분면에는 ‘건강기능성’, ‘영양’, ‘친환경’으로 나타났다. 연령별 ISA 분석 결과 2사분면에 속한 항목은 50대는 ‘계절 식재료 활용’, 60대는 ‘건강기능성’, ‘영양’, 70대는 ‘저렴한 가격’, ‘건강기능성’, ‘영양’으로 나타났다. 넷째, 시니어 소비자의 계획행동 이론이 건강 프리미엄 고령친화 HMR 구매의도에 유의한 정(+)의 영향을 미치는 것으로 조사되어 가설 1은 모두 채택 되었다. 계획행동이론이 구매의도에 미치는 영향관계에서 설명력은 55.8%이고, 회귀식이 통계적으로 유의하여 세 변수 모두 통계적으로 유의한 영향을 미쳤으며 태도(β=0.385), 주관적 규범(β=0.345), 지각된 행동통제(β=0.206)의 순서대로 종속변수에 대해 높은 설명력을 나타냈다. 다섯째, 시니어의 건강증진 라이프스타일 요인분석 결과로 나타난 ‘외모 추구형’, ‘합리적 건강 추구형’, ‘건강 적극적 유지형’, ‘건강 식생활형’, ‘스트레스형’, ‘신체 건강형’의 6개 요인으로 나타났다. 비계층적 군집분석을 실시하여 엑티브 시니어 집단(107명), 패시브 시니어 집단(179명), 스마트 시니어 집단(150명)으로 명명하였다. 군집에 따른 일반사항을 분석한 결과, 연령대, 거주인, 월평균 생활비, 건강관심정도, 정기검진 및 진료질환 여부, 치아 상태는 군집에 따라 통계적으로 유의하게 분포의 차이를 나타냈다. 여섯째, 군집별 건강 프리미엄 고령친화 HMR 제품 개발 요구도를 분석한 결과, 액티브 시니어 집단은 치료식 제품, 조리를 편하게 할 수 있도록 알맞게 전처리된 제품, 씹기 편한 제품 순으로 나타났다. 패시브 시니어 집단은 치료식 제품, 소화가 편한 제품, 저염 제품의 순으로 나타났다. 스마트 시니어 집단은 저염 제품, 치료식 제품, 저당 제품의 순으로 나타났다. 액티브 시니어 집단에서 치료식 제품(p<0.05)의 항목이 다른 집단보다 유의적으로 높게 나타났다. 스마트 시니어 집단에서 저당 제품(p<0.01), 저염 제품(p<0.001), 기능성 첨가 제품(p<0.05), 프리미엄 제품(p<0.01), 다양한 열량별 제품(p<0.001), 친환경 식재료 제품(p<0.01), 집에서 주문하고 배달까지 되는 제품(p<0.05), 조리를 편하게 할 수 있도록 알맞게 전처리된 제품(p<0.05)의 항목이 유의적으로 높은 개발 요구도를 보였다. 일곱째, 군집별 건강 프리미엄 고령친화 HMR 제품 구매 시 추가지불의사를 분석한 결과, 액티브 시니어 집단은 치료식 제품, 친환경 식재료 제품, 소화가 편한 제품의 순으로 나타났다. 패시브 시니어 집단은 치료식 제품, 친환경 식재료 제품, 소화가 편한 제품의 순으로 조사되었다. 스마트 시니어 집단에서는 치료식 제품, 친환경 식재료 제품, 기능성 첨가 제품의 순으로 확인되었다. 스마트 시니어 집단에서 저당 제품(p<0.05), 저염 제품(p<0.05), 기능성 제품(p<0.05), 치료식 제품(p<0.05)의 항목이 다른 집단보다 유의적으로 추가지불의사가 높게 나타났다. 여덟째, 군집에 따른 HMR 제품 선택속성에 대한 ISA 분석 결과, 중요도는 높으나 만족도가 낮은 2사분면에 속한 항목은 엑티브 시니어 집단은 원산지 표시, 식재료의 질감, 계절 식재료 활용, 패시브 시니어 집단은 저렴한 가격, 영양, 친환경으로 나타났다. 스마트 시니어 집단은 건강기능성으로 조사되었다. 본 연구를 통해 시니어 소비자들이 접근할 수 있는 다양한 분량의 포장, 편의성이 강화된 제품군 등 소비자 요구들에 대응하는 상품 개발 전략도 함께 모색되어야 할 것으로 사료된다. 국내 고령화가 빠르게 진행된다는 점을 고려할 때, 평상시 식사대용식으로 충분한 영양과 열량을 갖춘 건강기능성이 강화된 HMR 제품, 친환경 식재료 및 계절 식재료를 활용한 프리미엄급의 HMR을 개발해야 할 것이다. 더 나아가서는 시니어 소비자의 요청에 따라 제품을 만들어 주는 맞춤 제작 서비스인 커스터마이징형 메뉴개발도 함께 모색되어야 할 것으로 사료된다.

Study on Market Segmentation Strategy for Developing Health Premium Senior-Friendly HMR Products
This study aimed to understand seniors' needs for and recognitions of health premium senior-friendly HMR products and analyze the relationship between them, by applying the theory of planned behavior to the selection of senior-friendly HMR products. In addition, it segmented markets according to health promotion life styles, and therefore, conducted a research for suggesting a market segmentation strategy. This study would provide basic data for the development of health premium senior-friendly HMR products and propose effective marketing strategies. The subjects included 436 senior consumers who have experienced to use HMR products. The data collected were analyzed by using SPSS statistics (ver.18.0, spss Inc, Chicago, IL, USA). The findings are as follows:
First, an analysis on the needs for the development of health premium senior-friendly HMR products showed the products can be arranged in order, by their needs: 'therapeutic products' (4.08), 'digestible products'(4.00), and 'slightly salted products'(3.95). An analysis on willingness to additionally pay, in purchasing health premium senior-friendly HMR products exhibited that products can be arranged in order by willingness to additionally pay: 'therapeutic products'(19.4%), 'eco-friendly foodstuff products'(18.3%) and 'digestible products' (16.9%), among 14 items.
Second, the importance of and satisfaction with selection attributes of HMR products were analyzed to show the rank of importance: 'freshness'(4.47), 'hygiene'(4.47) and 'clearness of packaging containers'(4.35). The rank of satisfaction was as follows: 'hygiene'(3.61), 'freshness'(3.53) and 'clearness of packaging containers'(3.51). Some items showed large differences in the importance and satisfaction in selecting HMR products: 'freshness'(0.94), 'hygiene'(0.87), 'health functionality'(0.78), etc.(p<0.001)
Third, an ISA analysis on all of the subjects' selection attributes of HMR products showed that items belonging to the second quadrant with relatively lower satisfaction included 'nutrition', 'eco-friendly' and 'use of seasonal foodstuffs. An ISA analysis of male seniors showed there were no items belonging to the second quadrant. Meanwhile, an ISA analysis of female seniors exhibited that 'health functionality', 'nutrition' and 'eco-friendly' belonged to the second quadrant. An ISA analysis on items by ages showed that items belonging to the second quadrant were 'use of seasonal foodstuffs' for 50s, 'health functionality' and 'nutrition' for 60s, and 'low price', 'health functionality' and 'nutrition' for 70s.
Fourth, H1 was adopted, as the theory of planned behavior was found to have a significant effect on health premium senior-friendly MHR purchase intention. The explanatory power of the effect of the theory of planned behavior on purchase intention was 55.8% and a regression equation had statistically significant effects on three variables, and they could be arranged by explanatory power for dependent variables: attitudes(β=0.385), subjective norms(β=0.345) and perceived behavioral control (β=0.206).
Fifth, six factors were drawn from an analysis of seniors' health promotion lifestyle factors: 'pursuit of appearance', 'reasonable pursuit of health', 'active maintenance of health', 'healthy dietary life', 'stress' and 'physical health'. From a non-hierarchical clustering analysis, active senior group (n=107), passive senior group (n=179) and smart senior group (n=150) were identified. An analysis on general characteristics by groups showed that there were statistically significant distributional differences in age groups, residents, monthly mean cost of living, interest in health, whether seniors have had seasonal health examinations and diagnosed diseases, and dental conditions, among groups.
Sixth, health premium senior-friendly HMR products can be arranged in order, by groups, from an analysis on the needs for the development of them: therapeutic products, products properly pre-treated to be easily cooked and chewing products, for the group of active seniors; therapeutic products, digestible products and slightly salted products, for the group of passive seniors; slightly salted products, therapeutic products and products with low sugar, for the group of smart seniors. Therapeutic products (p<0.05) showed significantly higher needs for development in the group of active seniors, than did those in other groups. Some items such as products with low sugar (p<0.01), slightly salted products (p<0.001), functional products (p<0.05), premium products (p<0.01), products by various calories (p<0.001) and eco-friendly foodstuff products (p<0.01), products to be ordered and delivered and products properly pre-treated to be easily cooked (p<0.05) in the group of smart seniors showed significant higher needs for development than did those in other groups.
Seventh, health premium senior-friendly HMR products can be arranged in order, by groups, from an analysis on the willingness to additionally pay in purchasing them: therapeutic products, eco-friendly foodstuff products, digestible products in the group of active seniors; therapeutic products, eco-friendly foodstuff products, digestible products in the group of passive seniors; therapeutic products, eco-friendly foodstuff products and functional products, in the group of smart seniors. Some items such as slightly-salted products (p<0.05), functional products (p<0.05) and therapeutic products (p<0.05) in the group of smart seniors showed significantly stronger willingness to pay than did those in other groups.
Eighth, an ISA analysis on selection attributes of HMR products by groups showed that items belonging to the second quadrant with high importance but low satisfaction were origin labeling, quality of foodstuffs, use of seasonal foodstuffs, for the group of active seniors; low price, nutrition and eco-friendly, for the group of passive seniors; health functionality, for the group of smart seniors.
From the results of this study, it is thought to be necessary to seek out product development strategies for meeting consumers' needs, including various volumes of packaging and product lines with reinforced convenience, which senior consumers can easily approach. It may be necessary to develop HMR products with enough nutrition and calories as meal alternatives in ordinary time and premium HMR using eco-friendly and seasonal foodstuffs, given the rapid aging in Korea. Furthermore, the development of customized menus, a customization service by which products can made according to the needs of senior consumers should be also considered.

From the results of this study, it is thought to be necessary to seek out product development strategies for meeting consumers' needs, including various volumes of packaging and product lines with reinforced convenience, which senior consumers can easily approach. It may be necessary to develop HMR products with enough nutrition and calories as meal alternatives in ordinary time and premium HMR using eco-friendly and seasonal foodstuffs, given the rapid aging in Korea. Furthermore, the development of customized menus, a customization service by which products can made according to the needs of senior consumers should be also considered.
