이와 같은 향어는 껍질이 두꺼운 등의 조직적 특성과 껍질 표면의 점액 성분, 즉 살충성분(linoleic acid)으로 간흡충 등의 기생충 감염이 어렵고, 특유의 흙냄새가 나지 않는 것으로 알려져 있으며, 조직감이 적당히 부드러우면서도 쫄깃하여, 참돔과 유사한 수준의 식감이면서, 뱃살의 지방이 많아 단단하고 고소한 것으로 알려져 있어 우수한 수산가공식품의 소재이다. 그러나 향어는 다른 어류와 같이 중골과 이에 연결된 잔가시가 있을 뿐만이 아니라 잔가시와 연결되어 있지 않으면서 그 부위에 또 다른 잔가시가 존재하고 있어 횟감이나 여러 가지 수산가공품으로 이용하는 데 많은 어려움이 있다.
하지만, 어류뼈는 칼슘과 인을 주로 하는 무기질, 콜라겐을 주성분으로 단백질, 그리고, 기타 성분이 적절히 이루어져 있는 물질이어서, 고온가압처리에 의하여 콜라겐이 젤라틴화되어 뼈로부터 용출되고 제거되어 뼈 내의 콜라겐 존재 부위가 다공화되어 쉽게 연화된다. 따라서 향어를 효율적으로 이용하기 위한 방안 중의 하나가 소비자 트렌드에 부응하게 하는 고온가압처리에 의하여 기생충 감염에 의한 여러 가지 문제점을 해결함과 동시에 중골에 연결된 잔가시 및 연결되어 있지 않은 잔가시와 같은 어류뼈의 연화에 의한 섭취 편의성을 부여하는 것이라 할 수 있다. 향어를 반건조하여 가정간편식(HMR) 형태의 뼈째먹는 생선으로 제조한다면 향어의 고부가가치에 크게 도움이 되리라 판단된다.
본 연구에서는 향어의 고도 이용을 위하고, 소비자 트렌드(customer trend)를 고려하여 향어를 활용한 반건조 제품과 뼈째먹는 향어 레토르트 식품과 같은 가정간편식(Home Meal Replacement, HMR)형 제품을 개발하고자 하였다.
제1장. 향어를 활용한 반건조 제품의 가공공정 최적화 및 특성
소비자 니즈(needs)를 고려하여 향어의 조직감 개선과 편의성 부여를 목적으로 필릿(fillet)으로 처리한 다음 반건조 제품을 제조하고자 하였고, 이때 반건조 시 이스라엘잉어의 두께와 지방함량에 의한 표면경화 억제를 목적으로 변온건조를 시도하였다.
변온건조의 용이성 및 표면경화 억제에 의한 고품질의 제품을 제조할 목적으로 껍질에 칼집 처리 유무와 변온건조 조건[건조를 위한 온도인 35℃ 조정 및 유지 시간, 그리고, 표면경화 억제를 위한 저온 유지 온도인 5℃ 조정 및 유지 시간 구명/건조를 위한 적정 온도(30-40℃ 범위(5℃ 간격)구명)]별 내부와 표면 수분 함량 차이와 산가로 칼집처리의 적정성 및 최적 변온공정은 다음과 같다.
원료 향어의 머리와 내장을 제거하고, 1차 세척한 다음 지느러미 및 꼬리를 제거하였으며, 이어서 등가르기한 후 뼈를 포함하여 어체를 등쪽육과 배쪽육으로 분리 및 껍질에 칼집을 내었다. 이어서, 2차 세척하여 피빼기 및 이물을 제거하였으며, 염지를 위하여 전처리한 원료에 대하여 2배량(v/w)의 염수[정제수 90% (v/w), 천일염 10% (w/w)]가 담긴 침지용기(가로 58.5 cm × 세로 38.3 cm × 높이 15.0 cm)에 15분간 침지한 뒤 3차 세척(1회, 10초)하여 과잉의 염분 및 이물을 제거한 후 탈수하였다. 이어서 전처리 향어는 35℃로 조정된 조건에서 4시간 건조 후 5℃로 조정된 조건에서 2시간 처리하는 과정을 3회 반복한 다음 35℃로 조정된 조건에서 2시간 건조하여 제조하였고, 최종 제품은 진공포장한 것으로 하였다.
최적 변온건조 공정으로 제조한 반건조 향어 제품은 taste value의 경우 원료에 비하여 훨씬 높았고, 산가와 갈변도의 경우 정온건조에 비하여 훨씬 우수하였으며, 조직감의 경우 부드러웠다. 또한 변온건조 반건조 향어 제품은 정온건조 제품에 비하여 관능적으로 외형, 색, 냄새 및 종합적 기호도에서 우수한 것으로 나타났다. 등쪽육 제품과 배쪽육 제품의 총아미노산 함량은 각각 18.84 g 및 16.94 g이었고, 주요 아미노산은 2종의 제품이 모두 lysine, aspartic acid 및 glutamic acid이었다. 등쪽육 제품과 배쪽육 제품의 무기질 함량은 한국인 남자 19-49세의 1일 권장섭취량 또는 충분섭취량에 비하여 칼슘의 경우 모두 4.1%, 인의 경우 각각 39.8% 및 34.4%, 칼륨의 경우 각각 9.9% 및 9.0%, 철의 경우 각각 26.0% 및 23.0%에 해당하였다. 등쪽육 제품과 배쪽육 제품의 지방산 총함량은 각각 15.6% 및 24.9%이었고, 주요 지방산은 2종의 제품이 모두 16:0, 18:1n-9, 18:2n-6과 같은 3종으로 동일하였다.
제2장. 반건조 향어 활용 뼈째먹는 레토르트 식품의 공정 최적화 및 특성
잔가시에 대한 거부감과 편의성과 같은 소비자 니즈(needs)를 고려하여 뼈째먹는 향어 레토르트 식품의 개발을 시도하였다.
반건조 향어의 섭취 편의성 부여와 상온 유통을 목적으로 열처리 정도(목표 열처리 온도인 121℃, 30-50분 범위, 5분 간격)에 따른 중골과 어육의 조직감, 냄새 및 관능검사로 살펴본 최적의 열처리 온도는 가압처리된 레토르트를 이용하여 121℃에서 40분간 처리한 것이었다.
최적 공정으로 제조한 뼈째먹는 향어 레토르트 식품의 등쪽육 제품과 배쪽육 제품 100 g 당의 일반성분 함량은 수분 각각 60.5 g 및 53.6 g, 조단백질 각각 20.0 g 및 18.1 g, 조지방 각각 15.0 g 및 24.1 g, 회분 각각 3.8 g 및 3.4 g, 탄수화물 각각 0.7 g 및 0.8 g이었다.
뼈째먹는 향어 레토르트 식품은 반건조 제품에 비하여 taste value의 경우 약간 높았고, 갈변도의 경우 크게 차이가 없었으며, 냄새강도의 경우 약간 강하였다. 또한, 뼈째먹는 향어 레토르트 식품은 반건조 제품에 비하여 근육의 경우 조직감이 훨씬 낮았고, 중골의 경우도 이질감이 없을 정도로 약하였다.
뼈째먹는 향어 레토르트 식품 중 등쪽육 제품과 배쪽육 제품 100 g 당의 총아미노산 함량은 각각 18.59 g 및 17.11 g이었고, 주요 아미노산은 등쪽육 제품이 lysine, aspartic acid 및 glutamic acid, 배쪽육 제품이 aspartic acid 및 glutamic acid이었다. 뼈째먹는 향어 레토르트 식품 중 등쪽육 제품과 배쪽육 제품의 무기질 함량은 한국인 남자 19-49세의 1일 권장섭취량 또는 충분섭취량에 비하여 칼슘의 경우 각각 99.3% 및 96.9%, 인의 경우 각각 86.3% 및 82.0%, 칼륨의 경우 각각 10.3% 및 9.8%, 철의 경우 각각 19.0% 및 15.0%에 해당하였다. 등쪽육 제품과 배쪽육 제품의 지방산 총함량은 각각 14.0 g 및 13.9 g이었고, 주요 지방산은 모두 16:0, 18:1n-9, 18:2n-6으로 동일하였다.
이상의 일반, 관능 및 영양 특성의 결과로 미루어 보아 향어 반건조 제품과 이의 뼈째먹는 향어 레토르트 식품은 간편성을 부여하면서, 맛과 조직감 등이 개선되면서, 영양이 농축되어 있는 제품으로 평가되어 충분히 시장성이 있으리라 판단되었다.

Israeli carp Cyprinus carpio is an improved variety through a crossbreed of leather carp, which originates from Europe (Germany) and has a low body depth, and the native Israeli carp, which has a high body depth. With its economics feasibility, this particular fish species is farmed widely not just in Israel but also in many countries around the world including Korea, making it a leading inland waters fish type.
The texture characteristics of Israeli carp's thick dorsal skin and the mucus on the surface of the skin - in other words a sort of pesticide (linoleic acid) - makes it unlikely to be prone to parasites such as Clonorchis sinesis, and free of the unique dirt smell while its texture is sufficiently soft and yet chewy, similar to that of red sea-bream, and its fatty ventral muscle is quite aromatic as materials for seafood products. But Israeli carp, unlike other fish species, has not only small bones connected to its spine like other fishes but also other small bones that are not connected to the spine but around it, entailing much difficulty in utilizing it for various seafood products as well as sliced raw dish.
But as fish bones are mainly consisted of mineral, such as mainly calcium and phosphorus, and protein as well as additional constituents like collagen and other substances, when collagen is gelatinized and eluted from bones under high temperature pressure processing, and thus the collagen regions within the bones are made porous, they can easily be softened. Therefore, one of the ways to efficiently make use of Israeli carp is high temperature pressure processing in consideration of consumer trends, through which it can resolve various problems caused by parasite contamination while also softening small bones connected to the spine as well as small bones that are not connected to it for better intake. Producing semi-dried Israeli carp in the form of home meal replacement (HMR) that can be eaten with all its bones would greatly contribute to the high added value of Israeli carp.
The purpose of this study is to develop semi-dried Israeli carp of home meal replacement (HMR) type products, such as Israeli carp retort products, which that allow the fish to be eaten with all its bones, for an advanced use of Israeli carp and consumer trends.
1. Optimum processing procedure for semi-dried Israeli carp and its characteristics Semi-dried Israeli carps were to be produced after processing Israeli carp as fillets to enhance their texture as well as for better convenience, in consideration of the consumer needs. During the semi-drying process, alternating-temperature drying was attempted considering the Israel carps' thickness and to prevent case hardening due to fat content.
For the purpose of producing high quality products through the alternating-temperature drying that prevents case hardening, the appropriateness of scoring and optimal alternating-temperature process regarding the acid values and the difference in moisture contents for inside and outside depending on whether the skin was scored and the alternating temperature drying conditions [looking into the time of adjustment and maintenance for the temperature for drying 35℃ and the time of adjustment and maintenance for the low temperature to prevent case hardening - 5℃, and looking into the appropriate temperature for drying (30-40℃ ranges, 5℃ interval)] are as follows.
Head and viscera of the raw material Israeli carp are removed before 1st wash; fins and tail are removed before cutting them along the back; fish body, including bones, is then separated into dorsal and ventral parts; and skin is scored with a knife. 2nd wash follows to drain blood and remove foreign substances; then it is soaked in a soaking container (across 58.5 cm × width 38.3 cm × height 15.0 cm) filled with the salt water [purified water 90% (v/w) & bay salt 10% (w/w)] twice (v/w) the amount of pre-treated raw material for 15 min for curing; and 3rd wash (once, 10 seconds) to remove excessive salt and foreign substances follows before dehydrated. The pre-treated Israeli carp goes through three times of drying for 4 hrs at 35℃ and then for 2 hrs at 5℃ before it is dried for 2 hrs at 35℃ for production. A final product is vacuum packaged.
Semi-dried Israeli carp produced through the optimum alternating-temperature drying process were much better in taste value compared to the raw material, much superior in acid value and level of browning index compared to the products through the constant temperature drying, and softer in texture. Also, the semi-dried Israeli carps using alternating-temperature drying were superior aesthetically compared to the constant temperature dried products, for their exterior, color, smell, and overall acceptance.
Total amino acid contents based on 100 g of a dorsal muscle product and a ventral muscle product were 18.84 g and 16.94 g respectively, and major amino acids were lysine, aspartic acid and glutamic acid for both 2 types of products. Mineral contents based on 100 g of the dorsal muscle and the ventral muscle products in comparison to recommended daily intake for Korean men in the ages of 19-49 or sufficient intake were 4.1% for calcium for both, 39.8% and 34.4%, respectively, for phosphorus, 9.9% and 9.0%, respectively, for potassium, and 26.0% and 23.0%, respectively, for iron. Total fatty acids for the dorsal muscle and the ventral muscle products were 15.6% and 24.9%, respectively, with 3 types of major fatty acids - 16:0, 18:1n-9, & 18:2n-6 - for both 2 types of products.
2. Optimization and characteristic of retort products with edible bones using semi-dried Israeli carp In consideration of consumer needs for their resistance to small bones and preference for convenience, the development of retort Israeli carp with edible bone was attempted.
Optimal heat process evaluated through texture, smell and sensory evaluation for spine and flesh processed in different heat processes (target heat processing temperature 121℃, within the range of 30-50 min, 5 min interval) for convenient intake and room temperature distribution of semi-dried Israeli carp was to make use of pressurized retort at the temperature of 121℃ for 40 min.
Proximate compositions for 100 g of the dorsal muscle and the ventral muscle products among retort Israeli carp with edible bone produced through optimal process were 60.5 g and 53.6 g, respectively, for moisture, 20.0 g and 18.1 g, respectively, for crude protein, 15.0 g and 24.1 g, respectively, for crude fat, 3.8 g and 3.4 g, respectively, for ash, and 0.7 g and 0.8 g, respectively, for carbohydrate.
Compared to the semi-dried products, retort Israeli carp with edible bone had a little more taste value, not much difference in browning index, and a little stronger odor intensity. Also, compared to the semi-dried products, the retort Israeli carp with edible bone products, had soft texture in muscles and weak backbone.

1. Optimum processing procedure for semi-dried Israeli carp and its characteristics Semi-dried Israeli carps were to be produced after processing Israeli carp as fillets to enhance their texture as well as for better convenience, in consideration of the consumer needs. During the semi-drying process, alternating-temperature drying was attempted considering the Israel carps' thickness and to prevent case hardening due to fat content.
For the purpose of producing high quality products through the alternating-temperature drying that prevents case hardening, the appropriateness of scoring and optimal alternating-temperature process regarding the acid values and the difference in moisture contents for inside and outside depending on whether the skin was scored and the alternating temperature drying conditions [looking into the time of adjustment and maintenance for the temperature for drying 35℃ and the time of adjustment and maintenance for the low temperature to prevent case hardening - 5℃, and looking into the appropriate temperature for drying (30-40℃ ranges, 5℃ interval)] are as follows.
Head and viscera of the raw material Israeli carp are removed before 1st wash; fins and tail are removed before cutting them along the back; fish body, including bones, is then separated into dorsal and ventral parts; and skin is scored with a knife. 2nd wash follows to drain blood and remove foreign substances; then it is soaked in a soaking container (across 58.5 cm × width 38.3 cm × height 15.0 cm) filled with the salt water [purified water 90% (v/w) & bay salt 10% (w/w)] twice (v/w) the amount of pre-treated raw material for 15 min for curing; and 3rd wash (once, 10 seconds) to remove excessive salt and foreign substances follows before dehydrated. The pre-treated Israeli carp goes through three times of drying for 4 hrs at 35℃ and then for 2 hrs at 5℃ before it is dried for 2 hrs at 35℃ for production. A final product is vacuum packaged.
Semi-dried Israeli carp produced through the optimum alternating-temperature drying process were much better in taste value compared to the raw material, much superior in acid value and level of browning index compared to the products through the constant temperature drying, and softer in texture. Also, the semi-dried Israeli carps using alternating-temperature drying were superior aesthetically compared to the constant temperature dried products, for their exterior, color, smell, and overall acceptance.
Total amino acid contents based on 100 g of a dorsal muscle product and a ventral muscle product were 18.84 g and 16.94 g respectively, and major amino acids were lysine, aspartic acid and glutamic acid for both 2 types of products. 2. Optimization and characteristic of retort products with edible bones using semi-dried Israeli carp In consideration of consumer needs for their resistance to small bones and preference for convenience, the development of retort Israeli carp with edible bone was attempted.
Optimal heat process evaluated through texture, smell and sensory evaluation for spine and flesh processed in different heat processes (target heat processing temperature 121℃, within the range of 30-50 min, 5 min interval) for convenient intake and room temperature distribution of semi-dried Israeli carp was to make use of pressurized retort at the temperature of 121℃ for 40 min.
Proximate compositions for 100 g of the dorsal muscle and the ventral muscle products among retort Israeli carp with edible bone produced through optimal process were 60.5 g and 53.6 g, respectively, for moisture, 20.0 g and 18.1 g, respectively, for crude protein, 15.0 g and 24.1 g, respectively, for crude fat, 3.8 g and 3.4 g, respectively, for ash, and 0.7 g and 0.8 g, respectively, for carbohydrate.
Compared to the semi-dried products, retort Israeli carp with edible bone had a little more taste value, not much difference in browning index, and a little stronger odor intensity. Also, compared to the semi-dried products, the retort Israeli carp with edible bone products, had soft texture in muscles and weak backbone.
