Matrix 별 즉석섭취식품(김밥, 샐러드, 훈제 연어)에서 온도 및 시간별 L. monocytogenes의 성장을 측정하였고 수학적 생육예측모델을 개발하였다. 또한 소비자 설문조사를 통해 즉석섭취?편의식품의 섭취량 및 섭취패턴을 분석하였고, 최종적으로 즉석섭취?편의식품에 대한 L. monocytogenes의 위해평가를 실시하였다. 백화점 및 대형마트에서 유통 중인 즉석섭취 편의식품을 해산물함유, 육류함유, 빵류, 밥류, 샐러드류, 신선편의식품류로 구분하여 총 633건의 미생물 오염도를 조사한 결과 서울 및 광주지역에서 판매되고 있는 즉석섭취 편의식품에서 문제가 될 가능성이 있는 대표적인 식중독균은 S. aureus와 B. cereus로 나타났다. 또한 김밥, 샌드위치, 훈제연어에 각각 L. monocytogenes를 접종하여 ${4^{\circ}C}$, ${10^{\circ}C}$, ${20^{\circ}C}$ 및 ${30^{\circ}C}$ 온도조건에서 14일간 저장하며 균의 변화를 관찰하였고 저장기간 동안 측정된 균수를 Gompertz model과 Baranyi model을 바탕으로 성장예측곡선과 생육 지표를 예측하였다. 1차 모델로 얻은 식품별 보관 온도에 따른 최대성장속도(SGR) 값을 polynomial model을 적용하여 보관 온도에 따른 SGR에 관한 2차 모델을 개발하였으며 예측값과 실제관측값을 통계적 지표로 비교한 결과 적합성이 매우 높게 나타나 산업에 직접 활용 가능할 것으로 판단되었다. 섭취량 및 섭취패턴 조사에서 섭취량은 2007국민건강영양조사 자료를 활용하여, fitting 프로그램(BestFit, @RISK 5.5)을 이용한 통계적 검증 (GOF test)을 거쳐 추정하였다. 섭취패턴은 전국에서 소비자 701명을 대상으로 섭취빈도, 섭취량, 소비행위, 섭취장소, 섭취시간건강상의 영향 등의 내용을 설문 조사하였다. 식중독 증상의 경험유무에 대해서 전체의 약 83.2%정도가 경험한 적이 없다고 응답하였고 식중독 경험이 있는 조사자는 전체의 약 2.3%정도로 나타났다. @RISK 5.5 프로그램을 통한 즉석섭취?편의식품류 중 L. monocytogenes 위해평가 결과 평균 오염 수준 -3.7993 Log CFU, 평균 섭취량 0.1 CFU으로 조사되었고 즉석섭취?편의식품 중 신선편의식품에 의한 질병발생 가능성이 높은 것으로 나타나 선제적 식중독안전관리를 위해 신선편의식품에 리스테리아 모노사이토제네스 음성 기준규격을 제안한다.

The objective of this study is to propose a draft standards and specification on ready-to-eat(RTE) foods. Accordingly, the method is being increasingly used as playing a decisive role in taking proper policies and actions to prevent breakout of microbial pathogens and may prevent unnecessary international trade friction and inspire motivation on product development. In order for the development of risk assessment, guidelines for microbiological standards of food in foreign countries were reviewed. In addition, microbiological monitoring and growth rate of L. monocytogenes in RTE foods including Kimbab, smoked salmon and salads were examined. We also investigated the consumption trends and intake pattern of RTE foods. First, collection of 633 samples of RTE foods were obtained from department stores and discount stores in Seoul and Gwangju areas. S. aureus and B. cereus showed the highest detection rate among the pathogens. The hazard analysis data of E. coli and L. monocytogenes could be applied to future studies on quantitative risk assessment of RTE foods. Growth data of L. monocytogenes in Kimbab, smoked salmon and salads were collected at several isothermal conditions(4, 10, 20, ${30^{\circ}C}$) and were then fitted into primary models, namely the Gompertz model and Baranyi model. The maximum growth rates obtained from each primary model were then modeled as a function of temperature using the polynomial model. The values of goodness-to-fit such as mean square error, Af and Bf indicate that these models were reliable for application in the food industry. A survey of intakes simulated by fitting program(BestFit, @Risk 5.5) using the Korean National Health and Nutrition Examination Surveys(2007). Question were raised about the intake patterns of RTE foods in the whole country. The 701 subjects aged 10-60 participated and an investigation was conducted using questionaries that include intake frequency, consumption behavior, place of intake and an influence of health. Finally, the risk assessment of L. monocytogenes in RTE foods was conducted by using the monitoring data. The results of risk analysis on L. monocytogenes of RTE foods by @RISK 5.5 program showed -3.7993 Log cfu for average initial contamination level and 0.1cfu for average consumption. And according to the study, occurrence of the disease are high in fresh cut food among RTE foods therefore, a zero-tolerance approach to Listeria control is suggested for anticipative management for food safety.
