본 연구는 국내 유통되고 있는 식품 중 Dioxins (PCDD/Fs) 및 PCBs류 (DL-PCBs, indicator PCBs)의 오염도 조사 및 안전성 평가를 위해 국내 5개 특별․광역도시(서울, 부산, 대전, 광주, 강릉)의 대형할인마트 및 재래시장에서 곡류 등 41개 폼목 총 205건에 대해 오염도 실태조사를 실시하였다. 분석의 효율성 및 실험실간 밸리데이션 그리고 상관성 분석을 위해 Dioxins류인 PCDD/Fs와 DL-PCBs, indicator PCBs를 나누어 진행하였다. 국내 유통 중인 곡류, 감자류, 두류, 채소류, 과실류, 해조류, 주류, 조미료류, 유지류, 육류, 난류, 어패류 및 유류 13식품군 41종에 대한 Dioxins (Dioxins 17종 및 DL-PCBs 12종) 오염수준은 백미 <0.001, 라면 0.004, 감자 <0.001, 두부 <0.001, 배추김치 0.002, 양파 0.001, 귤 0.001, 사과 0.002, 미역 <0.001, 맥주 0.001, 된장 0.002, 콩기름 0.009, 버터 0.039, 돼지고기 0.001, 닭고기 0.003, 소고기 0.021, 삼겹살 0.030, 햄 0.011, 소간 0.028, 순대(돼지내장) 0.004. 달걀 <0.001, 난황가루 0.037, 어묵 0.004, 고등어 1.132, 오징어 0.001, 명태 0.001, 멸치 0.350, 갈치 0.240, 조기 0.008, 게 0.081, 참치 0.015, 조개류 0.007, 장어 0.035, 꽁치 0.027, 연어 0.313, 삼치 0.918, 굴 0.008, 우유 0.001, 요구르트 <0.001, 아이스크림 0.001, 치즈 0.001 pg WHO05-TEQ/g weight의 검출량을 보였다. 식품별 Dioxins류 오염 기여도를 살펴보면 고등어가 36%로 가장 높았으며, 멸치 16%, 삼치 13%, 소고기 6%, 갈치 6%, 삼겹살 5%, 배추김치 3%, 연어 3%순으로 나타났으며, 우세한 동족체는 식품에 따라 다소 차이는 있었지만 TEQ (독성등가량)으로 환산하면 PCDFs가 주로 검출되었으며, DL-PCBs에서는 penta-PCBs와 hexa-PCBs가 주로 검출되었다. 한편 indicator PCBs 7종에 대한 오염수준은 평균 감자 0.019, 배추김치 0.048, 양파 0.125, 백미 0.026, 라면 0.042, 귤 0.250, 사과 0.096, 달걀 0.114, 두부 0.052, 어묵 0.307, 고등어 4.611, 오징어 0.347, 명태 0.329, 멸치 1.302, 갈치 2.820, 조기 1.346, 게 1.052, 참치 0.914, 조개 0.550, 장어 1.059, 꽁치 1.970, 연어 5.579, 삼치 5.886, 굴 0.815, 우유 0.198, 요구르트 0.249, 아이스크림 0.104, 치즈 0.160, 콩기름 0.158, 버터 0.455, 돼지고기 0.232, 닭고기 0.096, 소고기 0.105, 삼겹살 0.102, 햄 0.134, 소간 0.191, 순대(돼지내장) 0.065, 맥주 0.172, 된장 0.103, 미역 0.050 ng/g weight의 검출량을 나냈다. 검출율은 어패류가 다른 식품군들에 비해 월등하게 높은 비율을 차지하였으며, 육류, 난류 및 유류도 높게 나타났다. 동족체별 검출 정도는 대부분 골고루 검출되었으며 T4CB, P5CB가 주로 검출되었다. 어패류의 경우 주로 hexa-PCBs (PCB 138, PCB 153) 및 penta-PCBs (PCB 101, PCB 118) 위주로 검출되었다. 식품군별 노출량 기여도를 보면 어패류 45%, 유류 16%, 육류 8%, 과실류 7%, 야채류 7%, 주류 7%순이었다. 식품 41품목으로 계산한 우리나라 국민들의 Dioxins류 및 PCBs에 대한 위해평가 결과, Dioxins의 경우, 우리나라 일일섭취한계량 (TDI; Tolerable Daily Intake 4 pg TEQ/kg bw/day) 및 전국평균체 중 55kg을 고려할 때 약 3.8% (WHO05-TEQ)수준으로 건강상 우려할 만한 수준은 아닌 것으로 평가되었다. Indicator PCBs 7종의 검출수준을 토대로 일본의 TDI (5 μg/kg bw/day)와 비교한 결과 0.07%로 매우 낮은 노출량으로 건강상 위해를 주지 않는 수준으로 평가되었다. 단순회귀분석을 통해 Dioxins과 indicator PCBs와의 상관성을 분석한 결과 매우 높은 상관성을 나타났다.

For the test method validation, certified reference materials were analysed. Based on the measured dioxins and PCBs levels, average daily dietary intake estimates of dioxins and PCBs were calculated. The detected dioxin levels were <0.001 in rice, 0.004 in ramen , <0.001 in potato, <0.001 in tofu, 0.002 in cabbage, 0.001 in onion, 0.001 in orange, 0.002 in apple, <0.001 in seaweed, 0.001 in beer, 0.002 in soybean paste, 0.009 in soybean oil, 0.039 in butter, 0.001 in pork, 0.003 in chicken, 0.021 in beef, 0.030 in pork belly, 0.011 in ham, 0.028 in cow liver, 0.004 in pig offal, <0.001 in egg, 0.037 in dried yolk, 0.004 in fish cake, 1.132 in mackerel, 0.001 in squid, 0.001 in pollack, 0.350 in anchovy, 0.240 in hairtail, 0.008 in croaker, 0.081 in crab, 0.015 in tuna, 0.007 in clam , 0.035 in eel, 0.027 in pacific saury, 0.313 in salmon, 0.918 in specific mackerel, 0.008 in oyster , 0.001 in milk, <0.001 in yoghurt, 0.001 in ice cream, and 0.001 in cheese pg WHO05-TEQ/g weight, respectively. The contribution of dioxins levels were 36% in mackerel, 16% in anchovy, 13% in specific mackerel, 6% in beef, 6% in hairtail, 5% in pork belly, 3% in cabbage, 3% in salmon. In the study, PCDFs, penta-PCBs and hexa-PCBs in congeners of dioxins in food were mainly detected when converted into TEQ (toxicity equivalents). The detected levels of indicator PCBs were 0.019 in potato, 0.048 in cabbage, 0.125 in onion, 0.026 in rice, 0.042 in ramen, 0.250 in orange, 0.096 in apple, 0.114 in egg, 0.052 in tofu, 0.307 in fish cake, 4.611 in mackerel, 0.347 in squid, 0.329 in pollack, 1.302 in anchovy, 2.820 in hairtail, 1.346 in croaker, 1.052 in crab, 0.914 in tuna, 0.550 in clam, 1.059 in eel, 1.970 in pacific saury, 5.579 in salmon, 5.886 in specific mackerel, 0.815 in oyster, 0.198 in milk, 0.249 in yoghurt, 0.104 in ice cream, and 0.160 in cheese, 0.158 in soybean oil, 0.455 in butter, 0.232 in pork, 0.096 in chicken, 0.105 in beef, 0.102 in pork belly, 0.134 in ham, 0.191 in cow liver, 0.065 in pig offal, 0.105 in beer, 0.103 in soybean paste, 0.050 in seaweed ng/g weight, respectively. Most congeners of indicator PCBs were detected in food. In case of fishery products, penta-PCBs (PCB 101, PCB 118) and hexa-PCBs (PCB 138, PCB 153) were mainly congeners and the contribution of exposure base on food groups was occupied by 45% in fish and shellfish, 16% in dairy products, 8% in meat, 7% in fruit, 7% in vegetable, and 7% in liquor. For exposure assessment of Dioxins (41 food, total 205 samples), the dietary intake was estimated at 3.8% compared to TDI (4 pg TEQ/kg bw/day) of Korea and the average Korean body weight of 55 kg and for exposure assessment of indicator PCBs, the dietary intake was estimated at 0.07% compared to TDI (5 μg/kg bw/day) set by Japan and the average Korean body weight of 55 kg. Consequently, dioxins, and indicator PCBs detected were not considered to cause adverse health effects on Koreans. In addition, correlations values obtained by applying simple regression analysis between dioxins (sum of PCDD/Fs and DL-PCBs) and indicator PCBs was shown strong correlations.
