전 세계적으로 식품소비는 건강지향, 웰빙 추구 등을 통해 자신의 삶의 질을 높이려는 욕구로 과거의 단순한 먹거리 의미가 아닌 맛, 건강, 다양성 등의 질적인 면을 중시하는 의미로 확대되고 있다. 세계 보건정책의 새로운 패러다임이 질병치료에서 질병예방으로 바뀌어 가고 있음에 따라 기능성 식품 소재 개발은 미래 핵심 동력사업으로 육성하기 위해 반드시 수행되어져야 한다. 현대사회는 각 종 독성물질에 쉽게 노출되며, 장기간 독성물질에 노출 시 체내에 축적되어 두통 및 피로감은 물론 심혈관계 질환 및 대사질환 등을 유발할 수 있다. 최근 디톡스에 대한 관심이 급증하고 있으나, 디톡스를 기반으로 한 기능성소재 개발은 미흡하다. 약 500여종의 식물, 영양소, 미네랄, 비타민류 등 기능성 식품소재 중 개별인정형 소재의 30개, 고시형식품소재의 8개만이 국산 농산물 및 임산물자원에 해당된다. 특히 임산자원은 표고버섯 및 표고버섯 균사체에 한정적이므로, 임산자원을 활용한 건강기능식품 및 기능성 소재의 개발은 임산자원 수요의 안정화/대량화를 위해 반드시 필요한 분야이다. 각 지역별 특산물 제품이 다양한 형태로 생산되고 있으나, 학술연구, 평가기술, 식품의 안정성 평가, 인적인프라 부족으로 고부가가치 기능성식품으로의 발전이 미비하기 때문에 전문가의 학술적인 근거와 기업과의 네트워크를 통해 체계적인 관리 및 사업시스템이 구축되어야 한다. 또한, 가공적성 연구결과의 DB화 및 DB 공개를 통해 임산자원 식품소재 및 고품질 식품 생산기술 개발에 활용될 수 있으며, 각 식품 소재의 활용가능성 증대를 기대할 수 있다.
