This study was performed to suggest optimum sanitizing treatments for ensuring microbial safety of fresh vegetables during washing and storage. The reduction effects of microorganisms on vegetables (spring onion, carrot, and red pepper) were compared among treatments of chemicals (NaOCl 200 ppm, 0.5% boxylⓇ solution, slightly acidic electrolyzed water (SAEW)), ultrasound, and the combination of ultrasound and chemicals. The storability was evaluated by the APC number changes at 4℃ for 9 days after treated 10 min. After 10 min treatment, the chemical treatments decreased the populations of APC by 0.79~2.00 log CFU/g, and ultrasound decreased by 0.35~0.85 log CFU/g. whereas the combined treatment was the most effective in reducing the APC number by 1.35~2.48 log CFU/g. Moreover, the combined treatment reduced of B. cereus spore, L. monocytogenes, and S. Typhimurium by 1.00~2.00 log CFU/g. The combined treatment achieved an additional 0.5 to 0.7 log reductions of pathogens compared to chemical treatment alone. During storage, the fresh-cut vegetables with NaOCl 200 ppm solution and the combined treatment showed the increase of APC number by 2.57~3.68 log CFU/g after 9 days, but 0.5% boxylⓇ solution and SAEW treatment by 1.34~2.85 log CFU/g. In case of whole vegetables, the number of APC increased by 1.30~2.31 log CFU/g when treated with NaOCl 100 and 200ppm solution, whereas by 1.15~1.62 log CFU/g with 0.5% boxylⓇ solution and SAEW treatment after 9 days.
