As germination temperature increased from 20 to 40℃, the weight loss by roasting was gradually increased from 7.3 to 12.1%, and soluble solid content and browning intensity was gradually decreased. 2. As germination temperature increased from 20 to 40℃, total polyphenol contents were gradually decreased. 3. As germination temperature increased from 30 to 40℃, total flavonoid contents in green coffee beans were gradually decreased, but were increased at 20℃, and roasted coffee beans was gradually decreased as increased from 20 to 40℃. 4. As germination temperature increased 20 to 40℃, DPPH free radical scavenging in green coffee beans was gradually increased from 53.8±0.3% to 77.8±0.1%, and roasted coffee beans was increased at 20℃, but gradually decreased at 30℃, 40℃ 5. Caffeine contents were decreased by germinating process in green and roasted coffee beans. Colombia coffee decreased to 0.4㎍/㎖ from 1.2㎍/㎖(67%).
