The purpose of this research is to provide basic information on the components of coffee beans and choice standards for customers by investigating quality characteristics of each coffee bean types through evaluations on physicochemical characteristics, anti-oxidant activities and sensory tests by its origin. The research involves four types of coffee beans by different country of origin; Ethiopia Yirgacheff, Costa Rica Tarazu, Brazil Cerrado, and Indonesia Mandheling. The results of the research were abstracted as follows;
1. The pH content between the coffee beans according to country of origin did not show significant differences, but Indonesia beans had tendency of the highest pH(5.53). A significant difference was found in brix values(p<0.05) according to origins, Ethiopia had the highest value(3.20) and Indonesia had the lowest value.
2. The results of caffeine and phenolic acid content including gallic acid indicated that significant differences were identified in each coffee extracts(p<0.05). In terms of caffeine content, Costa Rica beans contained the highest at 1.36 mg/mL followed by Indonesia(1.30 mg/mL), Brazil(1.23 mg/mL), and Ethiopia(1.18 mg/mL). For gallic acid content, Costa Rica beans also contained the highest concentration at 68.82 ㎍/mL and Brazil had the highest contents in chlorogenic acid(727.44 ㎍/mL) and p-coumaric acid(80.73 ㎍/mL). On the other hand, the caffeic acid contained in Indonesia beans with the highest value(88.45 ㎍/mL).
3. The significant differences were statistically shown between the coffee beans by country of origin in total polyphenol and flavonoid content. Coffee beans in brazil had the highest content while Indonesia had the lowest content, respectively.
4. The significant differences were found in total DPPH and ABTS radical scavenging activities between the coffee beans(p Costa Rica > Ethiopia > Indonesia. 5. The result of sensory test indicated significant differences(p<0.05) in all groups such as aroma, flavor, after taste, acidity, intensity, and colour. Ethiopia beans showed the highest values in aroma(2.98) and flavor(3.33). Brazil showed the highest values in after taste(3.14) and acidity (4.05). On the other hand, Indonesia showed the highest values in intensity(4.14) and colour(4.12). Total preference of coffee beans was shown significantly different in four country of origin(p<0.05), indicating Indonesia being the highest(3.40) followed by Brazil(3.32), Ethiopia(2.97) and Costa Rica(2.67).
